    Mushrooms are valuable health food - low in calories, high in vegetable proteins, chitin, iron, zinc, fiber, essential amino acids, vitamins & minerals. Maitake (Grifola frondosa). This delicious, edible mushroom provides anti-cancer, anti-viral and immune-enhancing properties, and may also reduce blood pressure and help regulate blood sugar.You can find dried or fresh. Shiitake (Lentinula edodes). The shiitake has been found to have immune modulating, anti-viral and cholesterol-reducing properties. Certain extracts of shiitake mushrooms are used in Japan as adjunctive therapy to strengthen the immunity of cancer patients during chemotherapy and radiation. Find it - fresh or dried. Agaricus (Agaricus blazei). This medicinal mushroom has anti-tumor and anti-viral activity, and is widely used by cancer patients in Japan and Brazil. Reishi (Ganoderma lucidum)called an �immune potentiator�. Too woody and bitter to eat, reishi mushrooms are available in tea bags, capsules and liquid extracts. Animal studies have shown that reishi improves immune function and inhibits the growth of some malignant tumors. It also acts as a natural anti-inflammatory agent. They contains calcium, iron and phosphorus as well as vitamins C, D, and B - including pantothenic acid, which is essential to nerve function and the adrenal glands.     Truffles are found under oak and chestnut trees in Italy and France. Even here in America! They are earthy, pungent, garlicy, robust, savory. They are to be used sparingly. Truffles are to be stored in the refrigerator cover with raw rice 3 days. Being so expensive I'd save this dish for those you really love and use sparingly. What the heck just go for it.

    Lots of vegetables gives this sauce a meat sauce look but isn't. I had friends come over while it was cooking and taste it a thought it was a meat sauce. I great way to get a variety of vegetables into your family without the I don't like that veggie! This freezes well so you can divide into freezer bags for future use (if it lasts). Use on pasta, in stew, bean dishes, top a pizza, or in soups. This can make this on your stove top as well.
