    Delicious as a side dish! Very easy! I usually omit the cherry tomatoes for personal taste. Sun-dried would probably work well too, haven't tried that yet. Enjoy!

    Adapted from a recipe I found in a store magazine. I had these today and they were yummy, not to mention healthy. Quinoa contains 5g of protein, 3g of fiber and only 1g of sugar per 1/4 cup and its also very low fat. Try it!

    I got this recipe from the CopyKat website and I'm posting it here for safe-keeping and to add to my ever-growing list of recipes to try. I have not made it yet, but a lot of people did say it was delicious. Some people said they sliced the mushrooms and some said they left them whole. One person said she doubled the mushrooms because they did cook down quite a bit and also added sliced onions. I guess the sky is the limit as to what variations you can dream up. I think they would great as a topping for a grilled steak. Edited 12/21/09: I did make this last night and they are indeed yummy! I can see the need to at least double or triple the recipe as they do cook down an awful lot. I haven't experimented yet with increasing the mushrooms to say 2 pounds with 1 stick butter & 1 pkg ranch dressing mix but I think it can be successfully done judging by the amount of liquid in the pot. I'll come back and post the results when I try that.

    Ahhh.... I LOVE these mushrooms!!! When I attended college in the east part of South Dakota, these lil guys were almost a tradition to have for supper!! Well, now, since i live on the west side of the state, there are NO Hy-Vee Grocery Stores over here... NONE!!     Mushrooms marinated in seasoned white wine and lemon juice. From "Classic French Cooking" by Elisabeth Luard. Goes very well with a nice pan-seared steak! Note that the "Cooking Time" for this recipe is only the marinating time. This must be made in advance, but there is very little work involved.

    Try this seasoning instead of using the packets of taco seasoning. Makes a great gift too! This not only saves you money it tastes better too! You control the amounts- feel free to adjust to fit your taste. If you like it hotter you can add some cayenne or up the chili powder! Enjoy!
