    Bush tomato or Akudjura are plants native to the more arid parts of Australia. They have been used as food sources by Central Australian Aboriginal people for many thousands of years. These oysters would make a great appy for any party! Recipezaar wouldn't recognize akudjura so I had to list it as bush tomatoes BE WARNED that you cannot subsitute regular tomatoes for the same result.

    I like to cut the english muffins in half then each half into quarters before I spread the mixture on top. I also like to flash freeze them on a cookie sheet until frozen completely and then put in a zip lock bag and then put back into the freezer so you can take out the amount you wish to use without having to cook them all at once. I broil mine from the frozen state.

You can use ground pork, ground shrimp, or ground turkey with great success.     A excellent fish cake, very similar to the prawn cake I have posted, but of course not as high in cholestrol. You can also try grilling it..if you are concerned about adding on the pounds. Still taste good. I have also tried making them bigger, so that they are like a salmon pattie, and eating it as a burger. YUMMY!
