With both of my kids in college, I started searching for recipes for two and found this one in my "Small-Batch Baking" cookbook by Debby Maugans Nakos. I made these one day and they turned out perfect!! I hate to admit it, but I ate them both that same day!!! You will need jumbo size muffin tin for these cakes. I changed the original recipe slightly, by adding two tablespoons of the pineapple juice and two of buttermilk in order to add more pineapple flavor to the cake.
This recipe is wonderful. It's been passed through my family for generations. I mainly use them in my homemade Tiramisu, but my grandmother would make them for tea time. Whether you are making them as part of a recipe or planning on having them by themselves, these lady fingers will melt in your mouth.
The first time I had these I thought I had died and gone to heaven... This recipe is in the Top 5 for my FAVORITE desserts... Add a scoop of French Vanilla Ice Cream on top of one of these YUMMY brownies when they are warm, is the ULTIMATE in desserts in my opinion! 1-23-08 I did make an adjustment on this recipe. It should have been an 8x8" pan not a 9x13"... No wonder they were coming out crumbly! Also, I use 2 med. McIntosh apples for mine.
I love all the ingredients in this recipe and the muffins are delicious! They have become a favourite to bake when I plan a brunch for friends and family.

These are just like a piece of Carrot Cake. Delicious. Pop them in the freezer and you will always have a quick dessert when you need it. My youngest granddaughter likes to have me make cupcakes. She thinks they are just for her. I like to use Marg (Cayman Designs) Recipe #261024 on these and if you want it a traditional Carrot Cake Frosting, throw in some cream cheese to her frosting. Good!
A delicious, healthful vegan muffin that is crisp and golden on top, dense on and hearty on the inside, and all around addictive.

I found this recipe in a magazine article. This is a great use for blackberries that grow in abundance where we live. We pick the wild blackberries and spread them on cookie sheets and put them in the freezer. When frozen, transfer the berries to freezer bags. This way we always have plenty of berries to make muffins year-round.
Unfortunately I cannot take credit for these delicious muffins. This came from an old TOH magazine where someone had written in for this muffin recipe that they had tried at a restaurant called Curly Maple Resturaunt. These are perfectly moist and the kids gobble them up.
