I am letting my long held secret out of the bag! My family and friends love these and always want the recipe but I have, until now, guarded it with my life. Small danishes that make a great addition to a brunch buffet. You can also make fruit and cream cheese danishes by adding a spoonful of your favorite pie filling prior to baking. There are never any leftovers when I make these.
This banana bread is VERY good and VERY healthy! It does tend to come out a bit dense for my own personal taste, but considering all the substitutions I've made to the conventional recipes, it's fantastic! Enjoy!
When I substituted some of the butter with applesauce in a previous recipe, it actually made the bread more moist. I put one loaf in the freezer, but had to take it out within 24 hours because the first was devoured!
I was given this recipe by my sister-in-law who went to Weight Watchers. She advised that they were worth 1 point. I guess that all depends on the size we make the muffins. I make mine larger so I would think they would be 2 points. I find them quite tasty.
