Another family favorite from my mom's recipe collection. Has that lovely old fashioned taste that never fails to please. Moist and wonderful, makes for no leftovers at teas, coffee hour and bake sales. Great with or without the home made icing. The icing makes for over the top.
Sweet Strawberry muffins for all ages. You can either chop or slice strawberries, I sliced the strawberries in three pieces. Marinating time is not included in preparation time, enjoy warm or cold. Created for RSC #11
My kids have declared these "phenomenal!" The muffins are good in their own right but the spread gives them an incredible extra dimension. Please note, it is a cream cheese spread and not a sweet icing. The chocolate chips will not change form much. Perfect with a big, cold glass of milk or cup of coffee!
Our school is involved in Read Across America program that is held annually to celebrate Dr. Seuss' birthday. Room A5A created a new muffin in honor of this event. It's a simple recipe that uses grape jam, a children's favorite.
These are really good and a great way to get some good stuff into my kids, they eat them like candy! I didn't like the recipes with cooked/mashed sweet potatoes, so when I found this one, I was so excited. These smell absolutely wonderful when they are cooking too! We usually leave out the nuts, but put in the raisins

These muffins are really moist and really lemony. This is my oldest son's favorite muffin. The recipe come's from an old copy of Bon Appetite. My Dad always likes to add a few lemons into packages he sends us from California, which always makes these muffins extra special. 9-16-09 Since this was first posted it has become very difficult to find yogurt in the 8oz size so you either have to buy 2 6oz yogurts or add a little extra plain yogurt or a little sour cream. This is a very firm dough, not a loose batter like most muffins, but the muffins still come out nice and moist, enjoy!
The marmalade gives these muffins and lively flavour. Any marmalade will do but seville is the best.Found this recipe in one of my pickling books called Small Batch Preserving. I found it easy to make and good as well.
