    Monique's cookbook

My friend Monique smiles and rolls her eyes at the idea of cooking anything that makes use of more than one pan and calls for more than 3 ingredients. I used to feel comfortably superior with my uber-complicated recipe repertoire, but in compiling this cookbook I'm beginning to feel the joke's on me...

This is so easy to make and a healthy lo carb option as a side dish for a meal.

A delicious side dish. Can be made ahead and reheated. Great to take to holiday dinners, barbecues, etc. Everyone loves this dish. My aunt, Sylvia, who was the best cook in the world gave me this recipe and I have since given this recipe to others who also love it. Try it, you won't be disappointed. I have also made this with frozen broccoli. It's just as good.

This pie is so easy and so good! I got it from the Fanny Farmer Cookbook and I always double the recipe because it freezes beautifully.

My mother has been making this incredibly easy mousse for years as a Passover dessert, but I like it year round! She makes chocolate cups, fills them with the mousse and tops them with berries - better than sponge cake any day in my book...

Growing up, my father made this pretty frequently. You can imagine my surprise when I asked him for the recipe and was given this! Needless to say, it was not what I expected, but it was every bit as good as I remembered. Great served over rice or wide egg noodles.

The first time my friend Ruth served this to my family we all fought over it. It's really delicious and I have actually trebled and quadrupled the recipe at times.

This gives the chicken a nice crunchy bite. You can also cut the cutlets into fingers for a great appetizer.

This one is a big favorite in our house. Makes a great gravy -- perfect for sopping up with a hunk of rye bread!

Necessity is the mother of invention. I have a collection of blended whisky in the house that my husband refuses to drink, single malt snob that he is. He claimed the stuff was only good for paint thinner or rust remover. Not so. With a little help from Toolie who sent me some maple syrup from Canada, I invented a chicken dish that made everyone happy all around.

My Husband introduced me to potatoes cooked this way, and they are so good.

This is an easy dish that is quick to prepare ahead and looks really impressive. A great meal to serve to guests too, just increase the quantities as you need to. Goes well with roast garlic potatoes and grilled zucchini and red peppers.

This is an absolutely fabulous brisket recipe I got from a cooking site on Prodigy many years ago. The resulting sauce has a wonderful barbeque-like flavor, and it's my personal favorite brisket recipe. I have prepared this not only as directed, but in the hotter months, when I haven't wanted to keep the oven on for hours, I've baked it in an electric covered frying pan right on my counter. The results are a bit different; the sauce does come out a lot thicker and darker. But it is still great, and a wonderful way to get a long-cooking comfort food meal when you don't want to heat up the kitchen, or just don't have an oven available. Great for those dorm room meals! I used a 350 setting for the same 2 1/2 hours. Just watch carefully so it doesn't burn, reduce the heat if necessary, and stir the sauce a bit more than you would if using the oven.

Very, very easy to make and turns out wonderfully tasty. Aunt Romadene gave me this recipe about 30 years ago after I had it at her house and loved it!!

This is a "usual" that I bring to the office potlucks...It's also a favorite of my kids that they now EXPECT to have every New Years' Eve! So easy for a Crockpot appetizer! Sometimes I make this for dinner -- I just whip up some old fashioned mashed potatoes and serve the meatballs & sauce over top (or to the side) of the mashed potatoes...And the kids just love me when I do that!!! :)

This is very good and it doesn't call for many ingredients.

At our house, this is one of our favorite marinades when cooking London Broil. 4 hours of marinating is not included in prep time.

An incredibly easy and tasty way to do skirt steak. We've even used this steak to make fajitas.
