Serve with crusty bread, couscous, or rice to soak up leftover sauce. Moroccan paprika is slightly spicy, if yours isn't hot add a little cayenne.

    Recipe #375975

This Middle-Eastern recipe sounds delish and is healthy to boot! It is from Eatingwell.com. They also recommend sprinkling pine nuts and feta cheese over the top!

    Recipe #372883

Deliciously spicy, and very aromatic. These are far more interesting than regular old meatballs.

    Recipe #57610

I started eating this stuff after a great pita sandwich at the Pita Pit. I make mine with more garlic (cuz I don't have to suit everyone's taste, like a restaurant!). NOTE: the garbanzo's may offend a baba purist, but make for a stiffer spread and a different taste - try both ways and enjoy!

A Khoreshe is a type of thickened sauce, usually containing meat and vegetables, that is served over rice. This is one of my favorite Persian dishes, one I used to make for my friend Said. It is Persian homestyle cooking at its best!

    Recipe #27363

Its very easy to make and it stays in the freezer for along time.

    Recipe #130004

This is good with a fresh salad on the side. "Fish kabsa is a dish coming from the cities that border the sea and gulf in Saudi Arabia. Any white fish fillet that you may like would work well in this recipe." Modified from a recipe found on yasalamcooking.com.

A nice chicken and walnut dish from Arabia. (I increased the spices and that made it more appealing to me, at least)

This is a delicious chicken dish with a creamy walnut sauce. Serves best as an appetizer n goes well with corn bread (or rice/bulgur pilaf)!

    Recipe #183763

The story behind this dish is that the Imam (a Turkish official in the Ottoman Empire) fainted when his wife told him she'd used up all the olive oil in making this dish. Eggplant is an oil sponge, it loves to soak it up. Having said that, it is also very, very delicious, and if you allow the eggplant to drain well after frying them, you will still cut calories while retaining great taste. Great dish - vegetarian.

    Recipe #84776

Quick, easy and tasty. Yoghurt and beef can be prepared ahead so dinner is ready in the time you'll need to cook the pasta. Use roasted garlic for the cooked garlic in the recipe if you have on hand. - This is my variation from a turkish recipe. The yoghurt should be very mild and creamy rich, like Greek yoghurt, not tart or runny, or the dish will be too tart.

    Recipe #131701

A definite 5 stars. This is very good. I sometimes add okra (bamia). I serve it with Recipe #304145 and a fresh salad for a great meal masha Allah. Modified from the Gulf States section of The Complete Middle East Cookbook by Tess Mallos.

This has been a favorite dessert in many Middle Eastern and North African countries- this is my mother's recipe. It's very simple and easy to remember.

    Recipe #254309

Rice cooked with meat & wonderfully aromatic spices....

    Recipe #289165

Al Khabsa / Khabsa is very traditional. It can be made with many variations - this is just one of them - I hope to post more! Use chicken for this recipe, my others have lamb instead.....I have revised the recipe as of 09/02/09, although when I cook it the amounts are correct - perhaps it's the rice I use?
