I used to love these when I was younger, I could eat two in one sitting! I haven't had fast food in a year or two, but these taste like I remember Taco Bell's quesadillas tasting. I hope you enjoy it as much as I do.

    Recipe #78194

    Recipe #75940

My friend Charlotte (thanks C!!) gave this to me...it is SO easy and just delicious! She likes corn tortillas, I like flour, and it tastes great with both...whatever your preference!

    Recipe #75758

The green enchilada is a richer and more tastier enchilada opposed to the red enchilada.

A New Mexico favorite. It's quick, easy, and delicious! Don't have chicken, no problem. This recipe is great even without it. Try it, you'll love it!

This recipe is so easy and good! I didn't have time one day to make fajitas, so I decided to put them in the crock pot. They turned out real good and not soupy at all. The McKormick seasonings really gave the chicken a good flavor.

This is an easy dish for a busy day. Enjoy it with Spanish rice and refried beans. :-D

    Recipe #38297

Credit for this tasty recipe goes to one of my favorite cookbooks: "Low Fat Mexican Recipes." Pico de Gallo is a relish made of finely chopped ingredients. Cook time is chill time.

    Recipe #204572

This is a simple yet delicious tamale pie dish that will satisfy even the hungriest people. My whole family loves it. You can use beef instead of ground turkey if you want too. Tastes great with ground turkey though. Enjoy!

    Recipe #206398

This is so easy a beginner can make it. I use a round casserole and use more tortillas then the recipe calls for. I cut them in half and just fit them together. I use 6 or 7. Just use your judgement. Enjoy!

    Recipe #205855

This recipe came from my husbands grandmothers recipe card file. Its pretty old. We all love it, and I hope you do too. You can play around with this recipe and add what you want to suit your tastes. I prefer it as it is.

    Recipe #205607

In this easy casserole-style pizza, strips of biscuit dough bake right in with taco-seasoned ground beef. This recipe appeared in the Pillsbury 2000 bake off and is from Karen Hamilton, Titonka, IA.

    Recipe #207555

This is different than the regular taco pies. It uses spaghetti as its crust or shell. It’s very good; I hope you decide to try it.

    Recipe #208690

This tasty combination is great for tostadas and burritos. I got this little ditty from my favorite resource "Low Fat Mexican Recipes"

    Recipe #204620

Crunchy, cheesy, and delicious. From Some Like it Hot by the Junior League of McAllen TX. Whenever we grill we always cook extra chicken for chalupas, enchiladas, paninis, etc. This recipe can easily be halved.
