    Great taqueria-style tacos.

    Recipe #220759

After tasting the best tortilla soup of my life in Kino Bay, Mexico, I set out on a quest to duplicate. The recipe has been somewhat 'gringoized' however it's very close. The key is use the freshest ingredients as possible.

    Recipe #169728

A luscious, tender Mexican beef stew with very basic ingredients. The oven baking makes the meat extremely tender, and the cumin gives it so much flavor! This is a typical Mexican beef stew, simple, with not a lot of vegetables. Serve folded up in warm tortillas, or on rice or with your favorite cornbread.

    Recipe #84098

Make this in the morning, bake it that evening. A hearty entree. Our vegetarians can leave out the meat, with great results.

    Recipe #26243

This is a great tomatillo salsa, that goes wonderfully with fish tacos. It is the perfect blend of flavors, with just a little heat. For more heat, I would add a jalapeno or habenero, depending on your heat tolerance. A good basic green salsa.

    Recipe #181625

I love chowders, shrimp and spice, so what is not to like about this soup. I like to add a dollop of my "house salsa", which is a mixture of habeneros and chipotles in adobo sauce. It is also in this cookbook. Be careful though, it is really hot, but lots of flavor.

    Recipe #191708

I have been trying for years to formulate a great tasting "fresh" salsa. This is it. If you like a milder salsa, start out with one jalapeno and work your way up the heat scale.

    Recipe #208329

This delicious tuna salad is wonderful served in tomatoes or avocadoes, in a sandwich or with crackers. You may want to add a little more mayo to taste

    Recipe #224964

These are the hot carrots like you get in Mexican restaurants. They are positively addictive. I usually make a batch and share with a friend or neighbor. This recipe comes from a restaurant in San Diego called Alta Vista. It was owned and run by a woman named Mary Sargent. Her loyal customers were saddened when she closed her doors and retired, but at least we are able to make these delicious carrots.

    Recipe #143736

This is a refreshing change from a plain old fruit salad or fruit tray. This goes wonderfully with Mexican food.

    Recipe #175635

Be sure to use a thickish tortilla chip with this tropical appetizer. This dip will disappear quickly. You may use regular salsa or any fruit salsa you prefer. You may also layer this on a decorative serving dish, which is what I usually do.

    Recipe #175654

This is my stepdaughter's recipe for salsa. It is a wonderful salsa that will keep for a couple days in the fridge. It is best with garden fresh tomatoes, when you can find them.

    Recipe #175765

I won grand prize in the Cook's Country Magazine, Best Chicken Salad contest with this delish chicken salad You may sub tuna for the chicken for a great tuna salad; Recipe ##224964.

    Recipe #175794

I think I have burnt out my heat taste buds, because this salsa has become my "table" salsa. I love to add it to many foods. It can really add a zap to bland dishes. It is so easy, but it is really really hot. Be careful, be very very careful! Try adding a dollop to some chicken soup. Yum!

    Recipe #176410

This recipe is an adaptation from my girlfriend Jan's mother, Alice. I bought one of those mega cans of Bush's Baked Beans and diced prosciutto from Sam's Club/Costco, and made two different types of beans with very little extra work. I loved the chipotle version.

    Recipe #178069

This is a spicy delicious Mexican chicken soup. It's flavor only gets better the next day. A flavorful homemade stock really makes this soup, but commercial stock is good too, just make sure you check for saltiness before adding additional salt. Personally, I like a spicier soup, so I would add 2-3 chipotle chiles

    Recipe #178082

This hearty rich soup is a definite must during cold wintery days. Serve with some warm flour tortillas and butter, and you will have to loosen your belt when you finish.

    Recipe #178145

This is a great soup to serve with a Mexican-themed meal. I like my soup a little spicier so I add a little more "heat" to mine.

    Recipe #178149

This hearty Mexican chicken soup freezes great. Make this up and freeze in airtight containers or freezer bags. Great for taking to work for a quick lunch.

    Recipe #178158

This excellent soup is full of flavor. The broth is outstanding. For a less spicy soup, omit the chipotles.
