    This is a great appetizer dish, I have made it quite often for parties, never had a empty platter with this recipe, I am sure you will love this one. My taco seasoning mix recipe#76616 works well for this. You can adjust all amounts to taste.

ALL ingredients can be adjusted to suit taste. It is best to prepare this casserole and bake right away as the broken tacos will get too soggy.

    After experimenting with many different spice combinations over the years for me this is the closest to the store-bought package taco seasoning --- I always increase this recipe 10x and keep in a glass jar tightly covered in my fridge to have ready for recipes, if you like lots of heat then adjust the cayenne pepper to taste or you may omit completely, if you can find some dried granulated tomato powder then add about 1-2 teaspoons with the mix, I purchase mine at a bulk spice store it really gives the seasoning a lift, the amounts stated are equivalent to one package taco seasoning mix -- don't save this mix to use only for tacos, add some in your recipes to kick up the flavor, it's even great in chili, ground beef mixture for casseroles, stew, soups, and add some into you hamburger mixture for burgers, I even add this to my Parmesan meatballs --- this also makes a great gift for the cook on your list just increase amounts and present in a fancy glass jar.

    I have made this many times to serve at get togethers and I always receive rave reviews from everyone! if desired the amounts may reduced to half --- to save some time the beef may be cooked a day ahead, and refrigerated overnight as it must be cooled completely before adding the ingredients in with it, you may want to purchase two bags of nacho chips and use one to serve on the side --- when cooking the ground beef, I always try to leave it into larger size chunks, it looks better in the salad, really you may use any size bag of nachos that you like, the 12 cups size is only estimated, you can add any amount desired in with the ground beef/salad mixture, just make sure to add them just before serving as they tend to get soggy --- see my recipe#76616 -- I sometimes add in a can of drained and rinsed black beans :)

    This is a very tasty chicken dish, and easy to throw together. I have made this for myself and DH, so it will serve 2-3 hungry people, it's the perfect meal for a smaller family. This whole dish is prepared in an extra large frypan on top of stove, but if desired you may place the frypan in the oven (at 325 degrees) to cook the rice and chicken, just be certain to use an oven-safe frypan with lid. If you do not have a large enough frypan, just use a non-stick larger size pot. Although I have only prepared this recipe using the stated amounts, I am guessing that this may be doubled successfully, maybe 2 cups rice with 5 cups of broth, with 2 cans of diced tomatoes.

Make certain that you have a large oven-proof skillet for this recipe, as the whole thing is baked in the skillet. Try not to overbake the cornbread topping.

    This should serve around 8-10 people, it is so good! I use my guacamole recipe#71842 for this recipe, but you most certainly can use your own favorite recipe for the guacamole...the ingredient amounts can be adjusted to suit taste, and the complete recipe may be doubled. The taco sauce can be replaced with mild or medium salsa if desired, and the green olives may be replaced with sliced black, but this does taste better using the green olives. You may brown the ground beef and layer with the beans, chilies, cheese and taco sauce in the baking dish hours or even a day in advance, refrigerate then just bake before topping with remaining ingredients, although you will have to increase the cooking time slightly. Be certain to purchase a big bag of tortilla chips, you will need them!

    I have made these many times, they are so good! ---start with the amounts listed and add in more to suit taste. If you don't have a food processor you can use a hand mixer to mix the yolks. Plan ahead the prepared eggs must chill for at least 4 hours before serving to blend flavors. I boil 14 or 15 eggs as I like to have more yolk filling, but you can use just 12 eggs if desired. Serve this with crusty rolls and butter. Canned chipotle chilies or sometimes called adobo, can be found in any Latin-American markets, or specialty food stores and major grocery food stores in the Mexican section.
