This is a delicious tomato based rice dish, spicy pork sausage meat may be replaced for the ground beef which is what I prefer to use, make this as spicy as you like by adjusting the chili flakes, the olives may be omitted I strongly suggest to add them in you could substitute 3/4 cup frozen peas, this recipe was developed using converted rice I can't promise the same results using another kind of rice

    Recipe #385036

Substituting ground beef for the spicy Italian sausages will not be as good, Jimmy Dean's Spicy Pork Sausage may be used in place of the spicy Italian sausages --- although I have listed black beans red kidney beans also work well or you may use what you like, or if you are not a lover of beans you may omit, can also add in a 4-ounce can green chilies, I use lots of garlic for this you may reduce amount if desired

    Recipe #355261

Make this as spicy as desired by adjusting the jalapenos and Tabasco sauce, you can also add in crushed red chili flakes, I sometimes add in canned corn kernels

    Recipe #321883

Feel free to saute a little green bell pepper with onions, you may adjust the garlic and chili flakes to taste --- this is very good! :)

    Recipe #318561

Makes a great snack or lunch, thinly sliced turkey breast may be used in place of the smoked chicken slices --- the rolls must be wrapped and refrigerated for at least 1 hour or more before slicing or you may make them up to a day ahead ---adjust the Tabasco sauce to suit heat level or use cayenne pepper, all other amounts may be adjusted to taste, if desired serve the roll-ups with salsa or picante sauce for dipping.

    Recipe #313713

This is wonderful warm out of the oven with syrup :)

    Recipe #285773

This is a wonderful recipe for hot sauce that may be used in many recipes, if you are a lover of spicy sauce then you will love this, I make it all the time and use it in many recipes --- you may adjust the habanero peppers to suit heat level, for milder heat use 8 and for extreme heat use 12, I use the 12 habaneros my family loves extreme heat!--- a few dashes of sauce is all that is needed, this is hot and please use gloves while handling the hot peppers --- I have left the liquid smoke seasoning as optional I like to add it in, use only canned not fresh peaches for this sauce, servings is of coarse estimated --- you will love this!

    Recipe #285121

This is a *delicious* sweet Mexican pudding, you may reduce the amount of sugar but I prefer it sweet -- do not subsitiute the masa harina (Mexican corn flour) using anything else will change the texture and it will not be the same, masa harina is easily found in the Mexican section and baking sections of you grocery store, Walmart also carries it --- you will love this!

    Recipe #279039

Make this as spicy as you like by adjusting the dried chili pepper flakes and jalapeno amounts, my family likes extreme heat so I use 2 jalapeno peppers --- for even more flavor add in a small bottle of taco sauce and cumin powder if desired --- all amounts may be adjusted to taste --- I strongly suggest to make this soup a day or 2 days in advance the flavors will intensify, refrigerate then warm on top of the stove, all that is needed with this soup is a loaf of crusty bread :)

    Recipe #257788

This makes a great weekend brunch, all ingredient amounts may be adjusted to taste, I also add in a pinch of cayenne pepper to the eggs, the baking powder will make the eggs very fluffy, you may omit if desired but I suggest to add it in, wrap the tortillas in foil and warm in the oven at 200 degrees F while making the eggs, serve the tortillas with salsa :)

    Recipe #256920

This is your basic enchilada, you may take these to another level by adding in other ingredients to the ground beef, like corn, cooked rice, green bell pepper, jalapeño pepper --- you may also adjust the olives and cheese to taste ---make certain to have the ground beef filling still hot when filling the tortillas, or the enchiladas will take longer to bake and will get soggy, baking time should be no more than 20 minutes or just enough to heat up the dish --- see my recipe#76616 and recipe#168653

    Recipe #253905

This makes a great weekend brunch, don't omit the baking powder, it makes the eggs light and fluffy, adjust the Tabasco or hot sauce to taste :)

    Recipe #252586

Make this with bone-in chicken breasts, you may adjust the amount of cumin and chili powder to taste, the jalapeno pepper is only optional add in for heat, throw in some sliced green olives also if desired :)

    Recipe #251619

This is quite tasty, the jalapeno pepper is only optional I like to add in for extra heat, Italian sausages with the casings removed may be used in place of the ground beef or use ground turkey, I also like to add in some cooked crumbled bacon or smoked dry sliced sausage but that is only optional :)

    Recipe #250109

Add in some cooked chopped chicken or shrimp for a main meal, this salad will also pair well with French dressing instead of the ranch/salsa mixture, see recipe #241296 if you prefer a lot of beans in the salad then add in two cans, don't forget, add in the chips just before serving ;-)

    Recipe #242509

You will need a deep-dish 10-inch pie plate for this or make in an 11 x 7-inch casserole dish, adjust jalapeño peppers to suit heat level or you may omit. I can tell you that this is delicious!

    Recipe #240405

This is worth the time to make and 100% better than any canned! --- turkey bacon may be replaced with the regular bacon -- double or triple amount and freeze, this freezes very well and is worth having ready for recipes, if desired mix in some fresh cilantro to the bean mixture before using, to take this to a whole new level add in about 2 tablespoons taco seasoning mix at the end of cooking :)

    Recipe #238140

A delicious creamy chicken, black bean and corn mixture between layers of tortillas then baked, low-fat sour cream and shredded cheese may be used and all amounts may be adjusted to taste, I also add in finely chopped and seeded jalapeno peppers to the sour cream mixture but that is optional, you may add in about 2 tablespoons chopped cilantro if desired, see recipe#168653 or use purchased red enchilada sauce --- this is a great casserole! :)

    Recipe #234046

This is delicious creamy ground beef, bean and corn mixture layered between crushed tortilla chips and cheddar cheese then topped off with more cheese, tomatoes and green onions, if you like extreme spice then add in some cayenne pepper and use spicy salsa as well as the jalapeno peppers :)

    Recipe #231632

You may adjust the amount of taco seasoning to taste, the jalapeno peppers are only optional, this is really good!
