    I found this in the "Mystic Seaport All Seasons Cookbook" and figured I would post for safe keeping. They sound really tasty! They can also be made ahead and frozen (instructions included).

    My family and I got flooded out of our house after Tropical Storm Lee and while repairs were being made, we relocated our family to our camper. I only had a few things to cook with (no oven or stove top) so I came up with this casserole that can be made in an electric skillet. It has all the flavor of a fajita in a simple casserole! If you can't find the cheese soup mix, you can use a packet of cheese sauce from a box of mac and cheese (and it will probably be cheaper!)

    I found this recipe in a GIANT grocery stores Healthy Ideas magazine and decided to make it for my brood one weekend. They went before I could even get a bite so they must be good! I made them according to directions except that I used honey BBQ sauce because that is what I had on hand. I also used real bacon bits to save time instead of cooking and crumbling bacon. This recipe makes 6 appetizer sized servings.

    We sold these at my son's Midget Football games and we usually wound up selling out before the end of Game 2. I've seen a few other recipes on here but none that used individual bags of the Nacho Cheese Doritos to make these very portable and easy to dispose of once you're done! The bag is the bowl and you just toss it when you're finished. This would also be a great recipe for Super Bowl Sunday!

    My friend Mandy made these for a holiday party and I could not stop eating them! With only 4 ingredients, they are a snap to make. I like them because they are not breaded and they are baked instead of being fried for a carb healthy snack. You can use light cream cheese and light cheddar cheese to cut some of the fat, too, but I'm posting the full fat version that I originally tasted.     I found this recipe on site called Kalyn's Kitchen and my family loves it! You would never guess that it's a healthy recipe with as quickly as it disappears in my house. The chops get extremely tender and the sauce is slightly spicy without being overkill. Make sure you use a spatula to get the chops out in one piece because they tend to get "fall apart" tender.
