My friend Jolene gave me this one. I think she got it from "Diet for a Small Planet". It's one of those "keep all of the ingredients on hand for emergencies" recipes. When you burn something, quietly get of it and make this. No one will know. Prep. time doesn't include cooking the rice.
Not just a 'summer' dish, the oranges, reds, and greens in this make for a gorgeous harvest feast as well. The salsa is a wonderful blend of tart, sweet, and spicy and goes well against the cool flavor of the cheese (I often omit the chicken and make vegetarian quesadillas). Some of the typical ingredients for original mole sauce are difficult to get here. Today I came up with this, and it turned out a pretty good adaptation of the real thing. For the harissa, you can use piri-piri, sambal olek or whatever kind of chili preparation you like.
My new love is chipotle peppers so I was glad to find this recipe. Has a great contrast of sweet and spicy. I haven't actually tried this in the oven yet as the directions are written. I used the marinade with chicken pieces and then grilled it. Tasty! I stumbled upon it while surfing the web...got it from a blog called Elana's Pantry.
I got this recipe from a cooking forum years ago, working my way through my cookbooks, putting my favourites online and came across this. It's very yummy! I've made a couple of mod's.

From Company's Coming - made it for dinner tonight and I loved it, especially since it didn't have any canned soup in it like many similar ones. The only change I made from the original is that I prefer black beans to kidney beans and I added more cumin and chili powder than this states as I like it spicier.
This recipe is an old time family favorite. It's good to make when you have many mouths to feed but very little food supply! You can use what ever kind of chicken you got on hand. I prefer chicken breast, they cook faster, and it's easier.

I used to love these when I was younger, I could eat two in one sitting! I haven't had fast food in a year or two, but these taste like I remember Taco Bell's quesadillas tasting. I hope you enjoy it as much as I do.
