This is one of those dishes you can whip together in no time. I created it one
night when we needed something fast and easy and had very little in the house.
i have changed the ingredients a time or two since that first time, but my
family always says it tastes like more.
Note: Please know you can substitute most of the ingredients for whatever you
have in your refrigerator/pantry at the time. So have fun.
I'm not a fan of Emeril's, but I have to say he sometimes has good recipes! This was from his show and it's a fabulous dip for veggies or sturdy crackers or whatever. I make it frequently, it's a great dish to bring if you don't want to bring something that someone else might be bringing, adding more or less heat for individual tastes.
This is a heathlier version of a chile relleno. This is not a traditional relleno, but it is fast and easy to make in the microwave. Yes, microwave! I got this recipe from a lady that sells chile at the farmers market and I tried and really liked it for a quick chile relleno fix! Hope you like it too. You can use whatever cheese you want and use prepared bread crumbs if you want. I included step by step photos to help make these.
This is a recipe given to my Mother by friends in the 70's? I was forbidden to share it but I like sharing and think everyone should have a chance to try it! It's ooey gooey cheesy yummy! It uses "mild" green chilies not hot ones. Everyone that tries it requests the recipe. It is very bad for you but worth having at least once a year for a potluck. I've had friends try to make it with lowfat or nonfat ingredients and it doesn't work. I also have tried mixing all the ingredients together and it doesn't taste as good, the layers matter (even though they melt together)! I usually double or triple it and bake it in a removable crock from my crockpot then put it on low in the crockpot for potlucks. If you do this the layers are still the same but double or triple the amount in each layer. I usually assemble it the night before and put it in the oven right before the event. For extra gooeyness add extra jack cheese in the layers to completely coat them. Remember for a single recipe: you are using 3 cups of "cooked" white rice which is made from 1 cup of dry rice. One cup of cooked rice per layer (3 layers). Enjoy! Very yummy with my Recipe#233148.
Yes, they're meatless and lowfat, but they taste good, too. Don't substitute any other type of vinegar for the balsamic...this much regular vinegar on vegetables will just give you pickles, whereas the balsamic makes them taste a little sweet.
A tasty meal to throw together to use leftover veggies. It makes a great lunch, dinner or even a snack. You can use different veggies to your liking. This recipe is for 2 melts, but you can adjust for more servings.
This recipe started out as an ooops... and ended as a new and wonderful dish! Even my husband, a bona fide meat eater loved it! It is vegetarian, but adapted easily to vegan. Please don't let the long list of ingredients scare you... it's an easy recipe! Cooking times are an estimate.. I don't usually pay attention to the time.

I don't own a rice cooker but some people have had disappointing results using one. You will also need to adjust your cooking time if you want to use brown rice. I recommend following the cooking instructions as directed. Proceed at your own peril if you stray.
