Ground beef, peppers, corn, onions and cheeses all snuggled up like a pot pie between two crusts!Barry Conway submitted this winning entry to Emeril's Pie Contest. I watched him make this the other night and decided to try it. It's easy to see why this pie was a winner! It is just oustanding and a snap to put together. A great family meal, I would suggest a guacamole salad on the side. Watch the cook time! I only baked for 20 minutes.
When my children were small they always would run up and ask me what I was cooking and generally I would respond with "whatever comes out of the pot", that always made them giggle. This was always their favorite to "come out of the pot" and as teenagers they still ask me for this dish. I hope you enjoy and can make some fun memories with this dish.
My MIL passed this recipe on to me that she received in a recipe exchange. We tried it, found it easy to make, cheap, and very delicious.
Note: I can't remember the size of cans, nor the size of bag for the tater crowns. Just use the normal size for each item.
My mom created this recipe and when I tried it I was amazed! It is very, very tasty and super easy to make.
Tip: If you have extra filling, like I did, just pour over the top of tortillas and top with extra cheese. You could then add salsa, olives, etc. on top as well.
Special Note: I put in 8 oz. cans as I could not remember the can size of each ingredient. Just pick up the normal can size for each item at your grocery store.
