A friend gave me this recipe and it was an immediate hit with our family and friends. Adapted from www.TopSecretRecipes.com

    Recipe #25999

Found this in the May 2003 issue of Parenting.

Best poppers I've ever eaten. These freeze very well after frying, so you can make them ahead of time for a party and just reheat them.

This dip is to die for!!! I use jalapeno flavored refried beans and top the dip with fresh, seeded jalapenos, because my family likes it extra spicy! This dip is EASY and certainly a crowd pleaser! I found this recipe in one of my Pampered Chef Cookbooks.

You won't get that "canned - chili powder" taste with this one.

Make two batches so you can give one away!

If served with rice and refried beans you will be rolling away from the table. I make these for tailgate parties at my house-keeps them full and happy!!!!!! Please note prep time does not include cooking the meat, which can be done a day in advance.

    Recipe #11135

Potatoes with jalapeños and cheese rolled in a corn tortilla and fried till crispy. I started making these because I miss the potato tacos in San Diego.

    Recipe #208401

I found that these are a great way to get a bit more fish into our diet, plus they taste great. And by not frying the fish, these are pretty healthy, depending on your toppings. I love topping them with a mango or pineapple salsa and homemade coleslaw.

    Mexican marinated chicken breasts

    Recipe #235214

Corn tortillas filled with a cheesy chicken and salsa combination, then baked in the oven with a salsa and cheese topping. Serve with a salad or shredded lettuce and sour cream. Delicious. This recipe is gluten free but if you don't require your meals to be gluten free then you can use regular tortillas and your favourite salsa.

This is one of my favorite empanada dough recipes. You can fill the pastry with your choice of fruit filling or meat, whichever you prefer. I like to cook shredded pork in my crockpot and fill these pies and serve with a warm sauce and my Recipe #186079. You can't go wrong with this recipe.

    Recipe #198374

My dad was raised in Phoenix, Arizona, so he knows his way around Mexican food. The one thing that he will complain about in the huge international smorgasbord that is the Houston restaurant scene is the distinct lack of "REAL Mexican food", just a lot of TexMex. Nothing wrong with TexMex, but compared to the stuff in Arizona, it's a little... unbalanced. So when he said that my enchiladas were the best he had ever tasted, I took that as the true compliment it was. This is easy but time consuming, real cooking times are explained in the recipe. You can cook the using a skillet or a crock pot. You could even use leftover chicken by skipping to the rolling - but I would season the chicken with 1/2 cup stock and a quarter of the spices listed.

    Recipe #226018

This recipe came out of a family circle magazine. It was a recipe that crisco put in the magazine, but they are wonderful enchiladas. I highly suggest you make the enchilada sauce rather than using the can stuff because it has excellent flavor.

Got this recipe from a friend. They are really good. A nice variation on the dish.

I love taquitos, but it can be hard to find vegetarian-friendly versions (especially in restaurants). This easy recipe can be adapted for vegan diets as well.

    Recipe #33202

One of my favorite things from Roberto's Mexican food. Simple yet oh so good. Enjoy with pickled jalapenos and carrots.

I've had this recipe posted for a long time and it's gotten great reviews as is so I don't want to change anything to how it's posted, but I don't make it the same way anymore. After frying the stuffed and battered peppers I put them in a pan, then pour enchilada sauce over them. Next I sprinkle them with cheese and then bake them til the cheese is melted. SOOOO yummy. Also a tip for anyone who is worried about their peppers holding together: Use toothpicks to hold the peppers closed before dipping them in the egg batter. I set the peppers in the batter and spoon it over the top so that I can handle them carefully. Take the toothpicks out before baking or serving.

SUPERB! is the only way I can describe this AUTHENTIC Mexican dish served at Las Manitas or little hands, an amazing restaurant in the heart of Austin owned by sisters Lidia and Cynthia Perez. Sad day :( This restaurant closed 9/4 due to downtown development in Austin. We miss you Las Manitas! Hurry back so we can come to your new location! The Congress Avenue cafe is as much an Austin institution as the bats under the bridge. Food for the eye is served here as well! The owners are also the founders of La Pena, an organization to promote Latin arts, and display this amazing artwork proudly. So if you find yourself in our beautiful capitol make sure you stop in for an amazing treat! If you can't make it to Texas, bring Texas to you with this amazing recipe!
