This recipe was inspired by a meal I had at a local restaurant. The marinade is also great if you want to leave the chicken breasts whole and grill out in the summer. Of course, a good margarita or sangria are my beverages of choice with this dish.

Gourmet Magazine. Add jalapneno slices for more bite.

    Recipe #51670

*Needs to marinate 8 hours or overnite* I haven't seen a Chicken Taco recipe quite like this posted, so I thought I'd share. I found this while searching for diabetic recipes.

    Recipe #180912

I love this recipe you can use chicken or substitute beef. Its great either way! To save myself time on making chicken I buy the pre-seasoned shredded chicken or seasoned ground beef. If I don't buy premade stuff, i always season my meat.

From Taste of Home. We love Mexican food in our house, and I can't go wrong when I serve these. They are quick and easy - and always gladly received by my family.

These burritos have a great flavor and are very filling. This recipe makes a lot, but it reheats well. You can add or take away any number of ingredients to make these fit your family's tastes.

    Recipe #68620

These are absolutely to die for!!! They are not your ordinary taquitos. They're so good, I don't even use guacamole with them, although some still prefer them that way. Remember to get all your veggies in long thin strips. Time includes marinating.

I got this recipe from a news report. A guy was on probation and came back from lunch. He had to submit to a breathalyzer. He failed. He claimed that he didn't drink but only ordered a burrito at a stand. The judge then had the burrito stand give up the recipe. They did another breathalyzer after eating the burrito. Sure enough, even though it is cooked, all of the alcohol doesn't leave. Just be forewarned!

I have found that it works great to make the "filling" up a head of time. Just prep and put in the refrigerator until needed. This is one of our favorite meals. NOTE: The friend who gave me this recipe uses canned cooked chicken. I'm sure the other precooked chicken tenders they sell now would also work.

One thing (there are many) that I miss in California...was the El Pollo Loco Chicken places!! I found this recipe on a copy cat site! I serve this with warm tortillas and salsa!!

Quick, easy and oh so satisfying! We like these for a quick snack. Doubled it makes an easy dinner for 4. I will pick up a rotisserie chicken and a bag of salad mix on the way home from work and dinner is half made before I get home. With a little extra effort you can saute up some crispy bacon and sliced mushrooms. Makes them even better!

    Recipe #212294

Easy to make and a definite family pleaser.

These Enchiladas are over the top! I was hungry for Mexican food and couldn't decide if I wanted beef, rice, or beans so I concoted this recipe and we loved it. My DH absolutely devours them! They are VERY rich and filling though. *Note these are not a very wet Enchilada. If you prefer more sauce you could add some Enchilada sauce.

    Recipe #70442

This sauce can be used with beef or cheese enchiladas. The amount of "heat" in the sauce depends on the type and amount of chili powder you use.

    Recipe #42094

This is the only way my husband will eat tacos, and Lawry's Fajita seasoning is the only seasoning he will accept. Everyone who tries these likes 'em!

Enchiladas with a unique garlic flair, unlike any other enchilada I have ever tasted. The house smells WONDERFUL when these are baking. Although they do take some time to prepare, the work is definitely worth the reward! The ingredients are mostly things that you probably already have stocked in the cupboard. (Cook time includes stovetop and baking times)

Also requires 2 empty food cans (4-inches wide) and deep dish pizza pan (12 to 14-inch )

Easy, spicy. You can spice it up or down as much as you'd like. Great for the Superbowl.

    Recipe #82464

I LOVE fajitas, but restaurants seem to , well, kinda rip you off on the meat part! LOL! Seems there are an AWFUL lot of peppers and onion...PLUS, gosh, why is everything SO expensive? So much better to make them yourself! This is my "concoction", I love them with Spanish Rice (Zatarain's), and any kind of dip/salsa and chips! Make them at home and your house will smell so good the neighbors will be knocking at your door! *You can easily make a half a batch, too.
