Braising is a wonderful choice for less tender cuts of meat. Less tender doesn't mean less flavorful. The time it cooks, it becomes infused with the garlic and the wonderful aroma of the cinnamon. Add the white wine to the mix, and the squeeze of lemon at the end, and you come out with a favorite for sure! I like to serve mine over hot buttered noodles, but any type of rice is just as good.

Being Greek born I have tried my share of moussaka recipes over the years, this is a basic easy recipe I have been making for years and still make often, it has remained a huge family favorite, I have served this many times to guests for a dinner parties and always receive rave reviews! ---the traditional Greek moussaka usually has about 1 teaspoon cinnamon added to the meat mixture, you might want to add it in my family prefers it without --- you may also want to "sweat" the eggplant slices with a bit of salt sprinkled on for 1 hour before using

Our dinner group was getting together for paella and we were asked to bring an appetizer. I was looking for something Spanish and found this on Allrecipes where it was called "Dip for the Stars". It looks quite nice when unmolded and the combination of feta, sun dried tomatoes and pesto tasted great! We used it as a spread instead of a dip. I used salted butter because I had it and chopped almonds instead of pine nuts. The original says gin or vodka may be used instead of vermouth.

This wonderful, Mediterranean dish would even be better with some stuffed grape leaves, lemon wedges and some plain yogurt. Then bring out the coffee and baklava! This doubles very well.

Frittatas aren't just for breakfast! They make a great lunch or midnight snack too! I squeeze the tomatoes with a few paper towels to get the juice out. Feel free to add more or less of the toppings, to suit your families tastes.
