Home-made corn tortillas! Great for home-made corn chips, enchiladas, tacos, quesadillas--everything! A money-saver too, considering how much chips and store-bough tortillas can be. Prep time includes 30 minutes "sitting time."
This one is just GREAT! So full of flavor. It's thick and spicy, but not very hot, so fell free to add cayenne if you prefer fire in your mouth :)
This chili goes very well with a rustic bread and tomato/cucumber salad topped with chopped green onions and fresh basil.
I use grated peppers, because I don't like it too chunky, if you do, just chop them instead.
In the spirit of the Superbowl this year, I decided to make vegan chilli cheese dogs. This chilli was made from items that I had right in the pantry and was the perfect topper the veggie dogs served in grilled buns! I actually took the time to toast whole cumin and corrriander seed, and grind them in my spice grinder, which made a REAL difference in the flavor. Another note: I made this using 1 can of black beans, but I think 2 cans would have been the perfect ratio. Use your judgement!

This is a savory veggie chili that is more like a stew... it's a thick, FLAVORFUL, comfort-food kind of dish. I made this one up this weekend when I needed something fun for a crowd and it was a major hit with everyone- even the "meat heads" and I am not a veterinarian, but I love to eat like I am sometimes- and this one was definitely a winner!!! This recipe is perfect for seasoning 1 lb of ground beef, or the equivalent of 1 lb of vegetarian "ground beef" I prefer this to the packages the sell at the supermarkets which often contain too much sodium. This mixture is also nice mixed with 16 oz of sour cream to serve with tortilla chips, or to top a layered Mexican dip.

This is so fast and easy to make. The chipotles add a wonderfully smokey flavor. Feel free to add more or less depending on how hot you like it. Some chopped cilantro might be nice added to this as well.

At our house we love healthy food! The only requirement is that it also has to have taste , as well as being healthy. Who wants to eat healthy, if it tastes like cardboard?

Easy adaptable casserole. I won 2nd place in a recipe contest at my local Wild Oats market for this recipe....woohoo! .........(-_-) ..You can substitute regular cheese for the soy cheese and even substitute ground beast for the tofu..or veg meat like "Gimme Lean"
