    I'm tired of store bought poor tasting meat like meats, I want something vegetarian that is satisfying, tasty, and works for those times when I want a "burger" & fries or other "meat" food.

    I make batches of this veggie burger, and freeze patties for later. I usually serve it in pita bread. Yum! Adapted (tweaked and additional ingredients) from a recipe in the original Moosewood Cookbook recipe titled "Lentil-Walnut Burgers." Prep time includes chilling.

    These bear no resemblance to hamburgers other than being delicious in a bun with the same sort of topping. The "batter" will keep, covered, in the fridge, for up to a week making this an extremely convenient and delicious lunch or quick supper dish, or you can make tiny ones and serve as an appetizer. NOTE: I continue to make these regularly, and not surprisingly, don't make them the same every time. I often omit the Jalapeno and ginger, and instead add an extra grated zucchini and a tablespoon of mild curry powder.

    Kids usually love these nutritious patties, especially if you make them miniature sized. We usually eat them as a vegetarian main dish with my spinach stuffed potatoes and a green vegetable. I enjoy any leftovers in a sandwich the next day with lettuce and tomato on whole wheat bread.

    This is a classic Welsh recipe, often affectionately called a "Poor Man's Sausage" because of the lack of meat. If you cannot buy Caerphilly or Lancashire cheese you could substitute a strong Cheddar cheese. This would make a good meal for vegetarians.
