    This is from "Vegetarian Times: Low-Fat and Fast" (highly recommended). I've made it quite a few times now, and it's a nice bit of comfort food that doesn't require meat, doesn't add on the pounds, and uses up stuff left in the fridge. I like to serve it with lime cilantro rice and salad. For a tight schedule, assemble ahead of time and refrigerate and then pop it in the oven.

    This is a delicious, warm and comforting food! Very filling...quick and easy. If you are wanting to try something new, please give this a try! Of course you can make your own gnocchi and pesto, but in a time pinch... the pre-made stuff works just fine. Pesto from the refridgerated section of the market works much better than a jarred pesto sauce. Fresher is also better. I like to serve this with baked acorn squash. This dish actually reheats pretty well the next day, too!

UPDATE: I need to mention that I usually reserve some of the cauliflower pieces on the side before I blend, so I get a mixture of creaminess as well as some chunky pieces as an end result.     This is such a wonderful and traditional English recipe for Hallowe'en - All Hallow's Eve! It was a dish traditionally served to unmarried guests with a ring hidden inside. Whoever found the ring would be the next one to be married! This delicious mashed potato has nine ingredients in it - hence its name. Serve it as a supper dish by itself, or as an accompaniment to bangers/sausages, for a comforting Autumn supper dish! For those whom may be interested, a brief history on the origins of Hallowe'en: In ancient Britain this date was the pre-Christian eve of the New Year and Celtic Harvest Festival, when the souls of the dead were thought to revisit their homes to eat and drink. People left refreshments on the table and unlocked their doors before retiring for the night, then bells were rung, fires lit to guide the returning souls back to earth and animals were brought in for the winter. After Hallowe'en became a Christian festival, supernatural associations continued to thrive. It was believed that witches were abroad and that it was possible for certain people to perform magic and summon up spirits. Hallowe'en was once a time for making mischief - many parts of England still recognise this date as Mischief Night - when children would knock on doors demanding a treat (Trick or Treat) and people would disguise themselves as witches, ghosts, kelpies and spunkies, in order to obtain food and money from nervous householders. In certain parts of England youths still play pranks on their neighbours by hiding garden ornaments, whitewashing walls and ringing doorbells in the dead of night.

I originally found this recipe in the September 2008 copy of the BBC Good Food Magazine. The recipe states that the dish can be frozen for up to a month. It says to just defrost and bake in a medium oven for 20 - 30 minutes until piping hot.

    This recipe I actually got the idea for the recipe from "Secretly Delicious Spinach Pie", but I changed it so much it's really more like a whole new recipe. And OH MY! Delicious!
