    Sometimes it is necessary for the mouse to outsmart the cat. My husband will not get near meatloaf due to childhood culinary trauma. I adore meatloaf and with a bit of tweaking to my favorite recipe and shaping them into meatballs, we both are happy. But, he still does not know it is meatloaf.     I love a good meatloaf. What Redneck doesn't? The key to a good meatloaf, though is to get the right seasonings, the quality of the meat, and the right binding. Some put vegetables like carrots or other stuff in their meatloaf to trick their kids into eating healthier. A Redneck kid can sniff a veggie out from forty paces and will refuse to eat it.     This recipe comes from a "Cooking with Paula Deen" magazine (May/June 2006). My family loves this served with macaroni and cheese. The leftovers made a delicious sandwich the next day, topped with your favorite burger toppings.

    These are so delicious, I have even made this with pork breakfast sausage meat, do not precook the sausage meat for this as the meat will cook when baked --- make a double batch of these and freeze them, they won't last long! You can also add in a couple teaspoons minced yellow onions or a green onion very finely chopped if desired --- *note* this recipe was developed using original Bisquick baking mix, I cannot promise the same results using a clone mix for this.
