I watched my Grandmother make pies. During Christmas season my Grandmother and Great Aunts ( I was always in her skirt tails) would get together and make every kind of pie and cakes they knew. I am talking days and days of baking. I watched and helped. I was in Heaven. I was also the only child that wanted to be there. So I got all the attention and schooling. I loved it. So I don't know exactly who taught me but it was one of them. I had to stop and write the recipe due to it was in my head and not on paper. It is a warm feeling everytime I make them.
I came up with this recipe to save time due to working long hours. Now retired. Very easy, can be put together and cooked days later. Great around busy times like Christmas. Can prep on Sunday then cook on Tue. or Wed. I toned down the seasoning but can season according to taste. Also makes a good sandwich for lunch the next day. Can be cut up and added to a salad. As I stated this is a good choice for a busy life or for a busy fisherman ( my hubby said fishing is like a job) he sure works alot. lol
pre prep for any meat or veggie recipe
make ahead batches to freeze
I have stated making batches of green stuff for over 20 years to save time due to working over 40 hours a week
make large batches for one time easy clean up
saves lots of time over months and months of cooking
I put this together years ago and it is a fav at all parties. Easy and can be made 2 days ahead or can be frozen for later use. I like to make enough in Oct. freeze and use for Holiday parties in Nov. and Dec. Also makes great Christmas host gifts. Serve with any crackers. Also good with pepper jelly on the side.
This recipe comes from the restaurant "Brennan's" located in New Orleans. No one has to know how simple and quick it is. I posted this recipe exactly as it was in the book, however, if you like a little "heat" please feel free to add some cayenne pepper to taste.
