This recipe came from Trisha Yearwood, who married Garth Brooks and wrote a cookbook called Georgia Cooking in an Oklahoma kitchen with a forward by Garth Brooks himself! Gotta try these! :) Be sure to use paper liners in the muffin tins and spray them with nonstick spray; otherwise, they will crumble when you peel off the liners. This recipe also makes great mini muffins; just shorten the baking time by 5 minutes. You might also try using oat flour instead of all purpose for a healthier muffin.
This is a re-make of a recipe I've had forever...A great way to use up that one lingering banana in the fruit bowl, and the substitution of whole wheat flour for part of the regular flour as well as the splenda for part of the sugar makes these a bit healthier than lots of muffins out there. And they're delicious! Makes 2 dozen regular size muffins or 1 dozen regular and 1 dozen minis.
I love anything orange flavored and these are wonderful! Try adding walnuts and brown sugar to the tops before baking. Mandarin oranges are especially yummy in this one. Serve warm with lots of butter.

How is it that lemon got married to poppyseed in certain baked goods? Poppyseed I can take, but I don't like lemon...However I found this recipe, which gives me my poppyseed with something infinitely more palatable, apple! In addition I replaced some of the white flour with wheat, replaced white sugar with brown sugar and traded egg substitute for whole eggs...Try it, you'll like it!
A nice simple recipe for a fruited muffin, this time strawberry...My sister is a strawberry fanatic and always asks for this when she comes for a visit...This recipe has been updated to substitute oil for the butter and substitute Egg Beaters (egg whites) for the whole egg...It may seem (to some) a little denser than the usual muffin but its an excellent breakfast or snack item nonetheless :D
These are great for breakfast! I used pure maple syrup in them and the flavor was nice, very subtle. The recipe comes from the Pillsbury Complete book of Baking and has quickly become one of my favorites.
I recently visited my aunt in Ogden UT. We stopped by The Greenery for these muffins. After some diligent hunting we found their recipe. These are almost like a yeast bread when fresh baked. Serve them the Utah way with honey butter. Prep time is approximate. May be shorter.
This is a combination of a couple of recipes. I wanted an apple muffin recipe with oatmeal in it and a streusel on top. I also had one with a caramel drizzle so I just combined the best of three recipes! This can be doubled.
