    I made this for Christmas a few years ago for somebody who loves mangoes and ginger. They raved about it and each Christmas I was going to make it again for them, just never got seem to get around to it. So I dug this out of my file for this Christmas and posted it for any-one who may be interested. Chutney can be made and stored in cool, dark place for about 9 months, and once opened stored in the fridge.

    This appeared in the Food section of the Ottawa Citizen,Jan30/02 and was the first prize winner at the cook off sponsored by the Scottsdale Visitors Bureau,their second annual salsa challenge.The originator,Timothy Festeryga,is a chef at the prestigious Ottawa,Ont. Hotel Chateau Laurier, now part of the Fairmont Group of hotels. Mr. F says it goes well with corn chips or any white meat (chicken ,pork) or seafood. I know you asked for a chutney but this Canadian recipe for a salsa recipe (spicy) took the gold at the Grand Canyon State culinary cook off in Scottsdale, Arizona this past year for Timothy Festeryga of Ottawa,Canada, a chef at the prestigious hotel Chateau Laurier in Ottawa. It was printed in the Ottawa Citizen newspaper Jan 30/02. I hope you will try it. Bon apetite!

    This was a recipe I prepared many times and friends and family enjoyed it. When the local botanical garden had their anual mango festival and the recipe was for chutneys, I received calls urging me to enter. Although this is more of a salsa- I entered and..... 1st place!!! So here it is- enjoy! Excellent on fish, chicken, rice, or as a dip on garlic toast. I often make a tomato bruschetta and serve on the same tray for a nice orange and red visual.     This delicious salsa adds a new twist to soft tacos and burritos! I got the recipe last year, and it has quickly become a staple in our house!
