    Make-Ahead Buffet

    A collection of recipes I am considering making for a buffet that has to be done a day ahead of time. My other requirements are that most things be served cold or at room temperature (minimum reheating) and are easily scoffable with one hand — no dining room table at my place!

    This is a recipe I got years ago from an old friend. I rediscovered it while cleaning out an old recipe box. It's a delicious appetizer or addition to a relish platter. Also very easy. Cooking time is refrigeration time.

    For large gatherings, I think this salad would go over great! This is one of the best tasting macaroni salads I have ever had! I know there are a lot of ingredients, but don't skimp. The flavor sensation is absolutely incredible!! I saw this on Food Network's 'Calling All Cooks', and got the recipe from the website. This recipe serves about 25 people. NOTE: The ORIGINAL recipe calls for 1-2 Tbsps. garlic salt, and that's the way I entered the recipe. If you are salt sensitive, I suggest you use less. You can always add more.

    An excellent make-ahead for parties -- or even weekend lunches, served with a green salad. Add lots of cayenne or even hot pepper flakes if your tastes run more towards a spicier version.

    Use a feta that is not too salty, there can be quite a difference in flavor when you buy feta cheese. You can substitute the fresh tomatoes for sun-dried if you like a more pungent flavor, but use less and taste it before you add more. Add several tablespoons of milk to turn the dip into a dressing. Also very good to spread on a sandwich and top it with tomato and cucumber slices.

    One of my favorite make-ahead, deliciously different appetizers for a party! Everyone love it and asks for the recipe. DH doesn't like broccoli and he loves this pizza, as all vegetable flavors blend after overnight refrigeration. I'd guess it serves about 24+ people with little 1-inch square bites. Leftovers, if there are any, can be refrigerated for about 2 days.
