Main Dishes: A Feast of Beans and Rice

There are so many variations on the simple beans & rice meal, and I wanted to collect them together for easy reference. These are only the tip of the iceberg--the ones that intrigued me. They are a mix of tried & untried (by me).

My BF said this was the best rice he had ever eaten. I adapted this recipe from a Sunset Mexican Cookbook. This recipe can easily be cut in half.

    Recipe #212380

I got this recipe from one of the various Core Weight Watcher boards. It is YUMMY!

    Recipe #160186

This is a healthier version than most refried bean recipes. You can make this vegetarian by using all water. And the best part of all it cooks in the crockpot! This is adapted from allrecipes.com

My DH's aunt made these for us one night while we were visiting them--they are so good and easy! She made up a whole bunch and used the leftovers for quick lunches/suppers later in the week. They are quite filling, especially with the addition of rice. In fact, the bean mixture could be simply served over rice for a Cal-Mex beans & rice meal. Prep/cooking times are estimated. Using reduced fat sour cream and cheese, whole grain white flour tortillas, and no meat, a serving of 1 burrito has 6 points (WW).

Had this recipe since 1993 first time making it. Hubby really liked it! Not spicy at all, but for those that want more zing it would be easy to kick it up a notch or two!

    Recipe #101159

I found this on a OAMC website, which credits Healthy Meals in Minutes for this recipe. This was pretty easy, and nummy. This could also probably be made in a rice cooker (especially after thawing a frozen batch). I did the stovetop cooking for my two batches separately, since I was baking one batch for dinner and freezing the second. This worked out well for me.

I found this recipe in a copy of Vegetarian Times. Gallo Pinto translates as "painted rooster", and is a dish eaten by many Costa Ricans almost every day. The addition of ginger and Worcestershire adds a quite unique flavor to this dish.

This is a great, fool-proof recipe from someone who lived in Nawlins and wishes she still did.

A south of the border blend of textures and flavors. serve hot as a main dish or a side dish with grilled meat or chicken.

This recipe is quite a favorite at Treebeards' restaurant in Houston. It's posted in response to a request. Cooking time does not include the pre-soak or pre-boil time. To make it South Beach friendly, substitute low fat turkey smoked sausage for the regular smoked sausage, and serve with brown rice.
