I substitute egg noodles for lasagna noodles to make this dish quick to make. I'm always asked to make it for picnics/parties. It goes a long way to feed a crowd since it is so rich. You can make it with or without the sauerkraut, or half and half like I do.
This casserole is a good way to use up leftover cooked rice, chicken, cheeses, etc. My mother served this when I was a child...I don't know where she got the recipe but it's really yummy and I make it often.
This is a quick lowfat meatless dinner, easy because it uses items always on hand, and different because the sauce is milk rather than tomato based. Got this from my friend Diana and make it often. If I have time, I like to use fresh spinach, lightly steamed, and fresh Parmesan cheese.
I never liked Spinach til I had to try this recipe at my sister-n-laws and from than on I made this casserole for special dinners I either attended or made for supper at home. this casserole is easily adaptable -- use Mexican Blend cheese instead of cheddar, or chopped jalapenos for lots of heat. We prefer it made with the mild chilies. Really good for a church potluck -- I always leave with an empty dish.
