I've made these for so long that I'm not sure of the recipe origin. They never fail, are easy to make & always good. They also work well & impress as a starter if served with crisp veggies, tartar sauce or a light mayo sauce thinned-with-milk & flavored with lime juice, dill & chives. Makes 4 patties of entree size or 6-8 of starter size. *Edited to Add* -- My spec thx to Chef JillAZ for reviewing this recipe for the Freezer Tag Game in the OAMC Forum & for the info she provided. OH HEAVEN IN A BOWL! If there was ever a definition of comfort food, this would be one of them. Mom and Pop were poor when they got married and it just seemed only sensible to stretch leftovers tighter than the elastic on Sister Bertha's (second pew, piano side) pantyhose. This makes your leftovers something totally new! In fact, I've been known to stew a chicken just to make this. It's also good for when you're stuck in the snow.

I love a good meatloaf. What Redneck doesn't? The key to a good meatloaf, though is to get the right seasonings, the quality of the meat, and the right binding. Some put vegetables like carrots or other stuff in their meatloaf to trick their kids into eating healthier. A Redneck kid can sniff a veggie out from forty paces and will refuse to eat it. This does not apply to the mixed peas and mashed potatoes thing. This is a favorite recipe of mine. Haven't got a clue where it came from, nor does it matter. It satisfies this Redneck's palate. Give it a try.

I know there are a ton of Tso's Chicken (pronounced by the cook as "sho"). This one is exactly like the Tso's at Evergreen, the restaurant I frequent. This makes lots of sticky sauce, just great for going over rice. They are closed on Mondays, so if I'm craving Chinese, I have to make it at home, which is always better.

I LOVE shrimp. Rice too, actually. It doesn't hurt my stomach to eat either, depending on how they're prepared. BUT...this casserole, which I'm not a big fan of casseroles, is different. It's GOOD! and fancy enough for a dinner party. While it only serves 4, it's perfect for a small get-together of two couples. Serve with crusty bread and enjoy the praise you get from your guests!
