The original recipe calls for shrimp, but since we don't eat shellfish, I changed it to use chicken. From Light & Tasty. I haven't tried it yet, but I plan to soon. If you'd prefer the shrimp, substitute an equal weight of medium cooked shrimp, peeled, deveined, and cut into thirds, for the chicken.
I found this recipe in Light & Tasty Magazine. I was pleasantly surprised at how tasty and refreshing it is! This is a reduced-calorie recipe, but if you do not need to calorie count, then use regular milk and ice cream. You can also add more coffee granules if you like a stronger coffee flavor. I make the original recipe as a quick breakfast on hot summer days.
This is from Light & Tasty. I haven't tried it but it sounds interesting. It's made in the microwave. The original recipe states "1 envelope seasoned coating mix" so I guessed 8 ounces for the amount. I suppose you could use anything from a pre-packaged mix to cornflakes. I hope it's as good as it sounds!
My dearest friend, Carol, was the inspiration behind this recipe. There was a recipe published in this month's issue of Light & Tasty. It gave me some ideas and this bread was the end result. It is perfect as the base for fresh strawberry shortcake. Hope you enjoy!
