    The secret to char grilling lamb is to cook it over a high heat, searing in all the juices. Then just let it sit for a few minutes to relax, so that the meat becomes tender and wonderfully juicy. Its really not difficult and i guarantee that these delicious lamb pittas are well worth the effort.

    Before coming to Zaar I seldom cooked lamb. Now I fix it often. This recipe was in one of those supermarket booklets. I made a couple of changes and we loved the results. The cooking time includes the time needed to allow the roast to marinade in the refrigerator.

    These are my mother's world famous lamb shanks. They are absolutely delicious, the meat literally falls off the bone. Serve with vegetables and mashed potatoes. Wonderful with Merlot! It just sets off the flavours. Fabulous to serve for a dinner party as you can socialise and get everything ready because they cook for so long.
