I got this recipe from a former roommate, and we used to eat it pretty much weekly. This keeps well in the refrigerator, but you can eat it right away too. The feta cheese adds a nice punch, but the mozzarella makes for a more comfort-food feel; try both if you'd like! This is great as a meal in itself or as a side dish.
This is a recipe I developed and submitted to another website, Chicken breasts are cubed, stir-fried and added to a cilantro, lime juice, honey, and garlic dressing. Serve on a salad of mixed field greens, or over Jasmine Rice. Wrap in a flour tortilla or lettuce leaves for a lunch on-the-go. The prep time includes marinating time.

For our 5 year olds lunch box for either snack time or lunch for his first year at kindergarten that are reasonably healthy but will bring a smile to his face when he finds them. Kids tire of the same old sandwich, so I came up with this as a new and fun way to make sure he doesn't skip his sandwich!
I found this recipe in the book 'Fast Fixes with Mixes' and thought my son would enjoy this fun spin on the corndog. They are a hit and they will probably be made on a regular basis. For a more grown up version (great for football parties) try adding some canned green chilies, extra hot sauce or cheese. Really forgiving recipe and really easy to make changes. It makes about 18 muffins which seems like a lot but they reheat really well.
FRIED RICE (NOT!) Thats what my kids call this!! I got this recipe from my friend Bev, and it is a quick and easy side dish, that can be padded out with a few more veggies. I would suggest that you dont "muck around" with this too much the first time you make it, as I have tried to be too clever and it hasnt worked out as well!!!
having said that, I have to say I usually add garlic and ginger, and I am sure you have a favorite ingredient you would like to add :)
