    Saw this on Semi-homemade with Sandra Lee. They look so good. LOVE bacon on anything. Can be made outside on the grill on indoors under the broiler.

    Like tacos, only neater to eat. In Mexico, they're often deep-fried, but baking them works well too. It's easier and healthier, and the tortillas still turn golden brown and crispy around the edges. Serve with salsa and sour cream.

    Unlike most quesadillas, these are baked, not fried. These are also cut into thirds for appetizers, but if you'd like, leave them whole and have them for a meal! I love crab, and I love cheese. Frying these on a hot griddle, the owner takes a 1/3 pound handful of cheddar cheese to top a 1/3 pound burger pattie. The cheese spreads out, ice is placed around it, and the top bun is put in place before the whole thing is covered to let it steam. They use "flat-top" burgers, which I like because you get that nice caramelized crisp on the meat. So when making the patties, don't make them too round, flatten them out. This really works.     The beer makes these fajitas super tender. You could substitute chicken for the beef. I've never tried this with shrimp, but if you do let me know! Also, for added color use different colored bell peppers. For a truly Mexican dish add a sliced fresh jalapeno chilie. Prep time is marinating time. I don't know how many oz. in a bottle of Corona so it's just a guess.

    These bunless burgers are bursting with flavor. The recipe calls for sage and thyme, but poultry seasoning works just as well. Substitute a tablespoon of poultry seasoning for the sage and thyme. Also, I used a serrano pepper in mine, but if you don't care for the zip, you can omit it without affecting the overall taste of these burgers. Since these burgers have an Asian flavor happening, they work well served with fresh steamed or stir-fried veggies.

    Just got this in Penzey's fall 2008 catalog. I might suggest using a little more ground pork, like 3/4 lb (I used gr. turkey). I didn't have pizza seasoning, so I used Sharon123's Recipe #133784. I also added red pepper and sauteed the onions and pepper first. I completely forgot the olive oil, vinegar, garlic and oregano! And it still came out good. Even in the oven, the center of the tortillas were soft and messy, so be careful, and use both hands.

    This is how I make them at home! These are dsil's favorite- with no onion and tomato and extra sour cream! lol The great thing about quesadill's is you can tailor them to your exact tastes and it is a great way to sneak some veggies into those veggie haters. Try adding some tomato, avocado, spinach, mushrooms, etc.. inside the tortilla. Great way to introduce herbs too! Try cilantro, cumin, etc here! hope you enjoy!

    There are a ton of these recipes out there, but mine includes delicious and spicy Italian sausage. Quick meal that the kids will love to help out with and of course, eat! Great with a bit of homemade garlic bread and a nice Caesar salad! Can be prepared up to 2 days ahead of time and stored in the fridge, just let it sit 30 mins at room temp. before baking.
