    We enjoyed this easy and delicious macaroni and cheese. If following the Weight Watchers plan it is only 6 pts/serving. When I made it I used whole wheat elbow macaroni and a combination of Kraft 2% sharp cheddar and some Weight Watcher Mexican blend cheese. If you start the cheese sauce while the pasta is cooking everything will be done at the same time --so quick and so easy! Recipe source: www.weightwatchers.com

    One thing we really miss now that we're trying to cut back on the sodium is canned soups. We never realized the amount of sodium we were consuming through the soups we purchased! This is strange sounding, and I made it quite by accident, but we think that, although it might not be as thick as canned soup, it certainly has the flavor. DH says it has more flavor than canned - an explosion of taste! Withdrawal symptoms are going away .....

    Cookbook author Frances Levine created this recipe for her husband, who needed to follow a low-sodium diet. She suggests serving this over pasta with a sprinkling of Parmesan. I also like a little fresh chopped parsley. Add garlic, thyme or other seasonings, as you please, or enjoy the pure goodness of mushrooms. I use whatever dried mushrooms I have on hand.
