A nice, hearty soup with barley, veggies and some basil/garlic pesto. You can vary the vegetables as you wish. This soup would be delicious with some crusty bread and a salad. Prep time does not include soaking time for barley.

This is so beautiful! Peeling the potatoes is optional...your preference. Add some french bread and a salad and you have a meal! It can also be prepared and frozen for future use! Freeze in airtight container, then thaw in refrigerator for 24 hours. Place in a saucepan and cook over low heat until heated thoroughly....stir often! Adapted from Southern Living.
I am enjoying trying new salsa recipes with fresh garden tomatoes. I never would have thought to put in wine vinegar in salsa, but it makes the recipe. I left the skins on my tomatoes, and I left out the oil and still loved this. YUM! Recipe courtesy of The New York Times Cookbook.
This soup is the best! My mom owns a catering business and her chef makes this for the cafe. Flavorful and hearty, even has a bit of a kick to it. Serve with warm crusty bread...a great meal on a fall/winter day.
I love MISO soup and learnt to make this after living in Japan for a while. This miso soup is really simple and a breeze to whip up on cold days! Try it!!! You can even add other ingredients such as tofu and shitake mushrooms!
