    Recipe #466866

Sounds so healthy and delicious! A Middle Eastern version of nachos, but far more healthy for you. You can purchase Italian or Middle-Eastern style flatbread for this dish.

    Recipe #467396

This was one of the most popular dishes at Nancy Mehagian's vegetarian restaurant on the island of Ibiza and she shared it in her book "Siren’s Feast: An Edible Odyssey". There are two secret (and essential) ingredients in this recipe - fine bulgur (which has the added benefit of cooking quickly) and tamari soy sauce. This really is the best tabbouleh you will ever make! Dish should be chilled before serving.

This is a "flexitarian" recipe - meaning, it's readily adaptable to a vegetarian/non-vegetarian version - a boon for those who have to deal with both in a household. While this recipe is vegetarian, the author, Dawn Jackson Blatner, says 4 ozs of cooked salmon or tuna can be used instead of the chickpeas. Check your quinoa package for prep information - usually quinoa needs to be washed to get rid of a bitter coating, although it sometimes comes pre-washed.

I found this recipe on last week and was intrigued by it. I'm always looking for new dishes to make when our son and his wife come for dinner. They're vegetarians and we aren't, so sometimes grilled cheese or mac and cheese get old. So, I haven't tried this yet, but am posting it for safe keeping. Warning: cardamom and garam masala are expensive spices and this recipe only uses a little. So, if you can find them at some place like Whole Foods, you can buy just a little from the bulk aisle and save $$$.

    Recipe #331816

This recipe was inspired by the lentil soup at this falafel place where I used to live. I have always had trouble finding lentil soup recipes that were more of this Middle Eastern type, so thought I'd share mine!

This is a delicious, healthy, colorful soup. From Fields Of Greens by Annie Somerville. Freshly toasted and ground spices really make a difference here.

Just tried this one busy week-end as we had a- lot going on. Turned out we did't have this till a few days later. I think it improved the flavor.

I am posting it here for safe keeping and will be making before long. It looks absolutely delicious. It is a traditional Ramadan Soup. UPDATE - I have now made the soup and love it; I made it with red lentils which worked fine.

    Recipe #395399

My kids love this soup, friends who think they don't like lentil soup, love this soup. Hearty, and delicious on a crisp fall day, warms you to the soul on a cold snowy winter night. I like to serve this with our favorite cornbread.

    Recipe #333210

One of my favorite soups. It's tasty and easy to make. From Williams-Sonoma Collection "Healthy First Courses": For a vegetarian version, replace beef stock with vegetable stock. For a creamier soup, puree half of it in a food processor or blender and stir back into the pot.

    Recipe #442053

I found this recipe on another website, but can't remember where. It makes a delicious winter / autumn hearty soup. Gluten Free as well. Suitable for freezing.

    Recipe #460643

This soup is comforting and warming and the fresh herbs add a nice lift to the flavor.

    Recipe #420744

A nice, hearty soup with barley, veggies and some basil/garlic pesto. You can vary the vegetables as you wish. This soup would be delicious with some crusty bread and a salad. Prep time does not include soaking time for barley.
