    Low fat but Luscious Desserts

    I guess the name says it all. These are low fat but yummy. If they can be lightened even more by using light dairy spread or low fat milk, I do that too..

    A lo-fat muffin that tastes great. This is a "heavy" muffin - not light & fluffy, but tasty. To reduce fat & cholesterol I replaced the butter with Smart Balance regular (not light) spread and used 2 egg whites.

    My husband has started creating his own wonderful low-fat recipes and this one is delish! Fabulous for breakfast. He actually uses just shy of 1/4 cup of applesauce, but I couldn't figure out how to note that!

    A warming dessert, just right for a cold winter's night. Now this is comfort food, a combination of Sticky Date and Golden Syprup pudding with a layer of cooked pears. Served with whipped cream this is just divine! The hardest part is finding just the right pan to cook it in!

It provides all the wonderful fruity, groggy taste of a traditional Christmas pudding but it's light and easy to digest.     Nice quick easy recipe to make and a great way to use left over boiled/steamed rice. NOTE - I recently broke the dish I normally cook this rice custard in and the one I use now though the same size is deeper with a small surface area and it now takes about 55 minutes to cook through.

    I found this recipe in a newspaper and immediately thought of a fantastic lady **Jubes**, who likes to cook gluten free, and has some great gluten free recipes for any-one who has an intolerance. I have been lucky enough to have found and since converse with **Jubes** through here Recipe Zaar, and I sent her this Gluten free recipe, which **Jubes** made for herself and her family. Both **Jubes and I think it would work well with regular flour, but as yet I have not tried (but am going to). This recipe is called a cake, but **Jubes** suggests its more of a pudding type cake, but also says its super easy to make!!! So I have **Jubes** to thank for this recipe being posted!!!!! Thanks Mate!!!!
