This is my collection of lite recipes. They are not too organized at this point. (Just as an aside, wherever it says sugar in a recipe, I use Splenda and if it calls for brown sugar I use Splenda Brown) Hope you may enjoy some of them!!
A very low-fat easy dessert that take minutes to make, you could also make this with the full-fat version, experiment with different flavored puddings! The Splenda is optional add in if you prefer a sweeter dessert.
I have really been trying hard to lower the fat content of my foods for health reasons. In doing so I have been having fish a lot more often but I found myself missing the coating and texture of fried fish. I tried this as a test and the result isn't half bad if you realize that it's a compromise to keep your heart pumping. It won't work well with thin fillets as they cook too fast but with thicker fish (any kind, I used trout that I had in the freezer) this is a nice change from plain baked.
Although another recipe for this has been posted, it has been altered. I found this in the Sacramento Bee and according to them is taken from WW and has not been altered. It is hard to believe this recipe is a low fat dish.
All out of the freezer, put together from bits and pieces frozen for future use. Throw them altogether in a wok with some spices and you have an easy side for supper on a rushed week night. While this is cooking make the rest of your meal.
