    Healthy White Bean Turkey Chili

    I decided to get back on Weight Watchers and was googling recipes. I found one for white bean turkey chili, but decided to put my own spin on it. It is so good, hearty, and has a nice creamy and smoky taste. I only used one teaspoon of red pepper flakes because I was going to be serving it to my 2.5 year old. I was shocked she actually had like 4 hearty bites and was dipping her spoon in the liquid and slurping it up. This is a huge feat for my very picky eater. My hubby said it was a keeper. Also, I used two pounds regular ground turkey and one pound extra lean ground turkey. This recipe can also be OAMC and you could probably get 2 or 3 dinners out of it, depending on your family size. You could also use your slow cooker, just brown the turkey and your spices in a skillet, then transfer the rest of the ingredients into the slowcooker for the exception of the half and half. I would add that 30 minutes before serving. Enjoy! If you are counting points, there is 12 servings. We had hearty helpings, so I would say 6 to 8 servings if you are not restricting your portions.

    We enjoyed this for a weekend breakfast. I made slight changes from the original recipe printed on www.weightwatchers.com. Only 3 points/serving -- if changing to egg beaters for at least some of the eggs will decrease the points a bit (by about 1).

    We enjoyed this easy and delicious macaroni and cheese. If following the Weight Watchers plan it is only 6 pts/serving. When I made it I used whole wheat elbow macaroni and a combination of Kraft 2% sharp cheddar and some Weight Watcher Mexican blend cheese.     We enjoyed this simple soup which I adapted from weight watchers.com. It is a little soupy - so if you prefer a thicker soup, you may want to decrease the amount of broth or add some extra veggies. It also freezes great - and actually is better re-heated in the microwave.

    Tastes like a pizza, cuts like a pizza, yet there is no dough....though do have a fork and knife on hand for eating purposes because it can get a little messy if eaten with hands only. I am a South Beach dieter with a love for Italian foods and this is what curbs my craving for pizza. I love mine with the turkey pepperoni slices, onion, green peppers and mushroom. Serve with a tossed salad or marinated veggies.

    This sauce is so versatile, it meets all my family's taste. It is a recipe that I got from the Weight Watchers Favorite Recipes. Made as written, it is 1/2 fat exchange and 30 optional calories(58 calories and 2 g fat) for two tablespoons of the sauce. This was a book that was out before the point system, but it is 1 point for both 1 or 2 servings of the sauce in the point system. Two of us like a zesty sauce with a little heat and the other two like more heat in their sauce. I make the sauce and then remove half of it to one bowl for the milder tastes and add more red pepper or red pepper sauce(hot sauce) to the rest. I triple the amounts of this recipe for our family.
