    Low Carb

Low carb doesn't have to be steak, steak and more steak. Check these out! If you are in the very restrictive first two weeks of Atkins, these may have too many carbs, check the nutrition info first.

My French friend came over for lunch recently & as we stood in the kitchen chatting & sampling the fine wine, I thought I'd impress her and whip up a homemade mayonnaise for the eggs! As I started my drop by drop method, she laughed and showed me this AMAZING way of making mayonnaise in a flash! The only criteria seemed to be the bowl, or lack of a bowl - she uses an old fashioned TALL glass measuring jug, which I also happen to have. Once you have made it this way, you will never go back to the drop by drop way ever again! Here's Michelle's Mayonnaise!

You'll love this fish recipe! I have also made this with other meaty fish fillets too, works well with basa fillets also!

    Recipe #168529

This tasty ice-pop style snack is a real treat in the summer! Only fill the ice-pop mold about 3/4 of the way up, as the coffee will expand when it freezes. The number of ice-pops depends on the size of your mold.

Pincho Moruno is a Moorish inspired dish that has been improved (I think) by the Spaniards. It can be used with lamb or pork. I suppose you could do chicken or beef also but have never tried it with them. Recipe can be doubled, tripled, whatever without a problem.

Since my SO is on a modified low carb diet and I'm not, I wanted to come up with something Italian that we both would enjoy. And this seemed to fit the bill, please feel free to add or even omit some of the things you would like instead. For this recipe a smoked Italian sausage was used. I want to thank Chef Meg G. for inspiring me to try to make a quiche of my own. :) Submitted to "ZAAR" on June 23,2008.

A great substitute for chili rellenos.

I found this wonderful low-carb bread at Great Harvest Bread Company and now my life is complete. I used to make a ciabatta broiled cheesebread, but it was a no-no on low carb. Give this a try, it's simple and delicious.

    Recipe #107995

This is a recipe that I make from time to time when I NEED to go back to lo carbing. It is simple and lasts for a few days in a plastic container. You can reheat them, just remember to peel off the cupcake liner first, if it is metallic. Nuke it for a minute or less.

    Recipe #230453

I pulled this recipe off the net in 2003 when I was initially started low carbing. It has since become my go to recipe for something that will always add that sweet crunch that will keep me on the straight and narrow. If you are really watching your carbs, vanilla, pure or imitation, does have sugar in it. You need to look for the sugar free variety which can get quite expensive. I find they make great toppings for a low sugar ice cream dessert.

Like a fajita only with ground beef and without the wrap. I didn't have sour cream so I melted in cream cheese at the end and it was great!

    Recipe #277015

Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!
