This is a quick and easy recipe that never fails to please even my picky DDs. Since chicken thighs are usually inexpensive it makes a economical meal. I like to serve these with some type of rice side dish and a green salad.
A lower calorie and health version of an old favorite. Also known as how I got my son to eat Spaghetti Squash. Some times I tried to sneak in baby Portabella mushrooms, but DS never would eat when I did.
Prep time doesn't include the cooking of the spaghetti squash which can be done in the microwave and takes about 13 minutes.
This is the original recipe. I made it more like a cobbler (using no bottom crust at all to save on calories). Also, I used 1 tsp of apple pie spice in place of the cinnamon. It's rustic and homey and legal!!
My SO is doing low carb, and even those not doing low carb know that pasta is a big no - no. But sometimes even " low carbers " crave a casserole that's full of cheesy goodness. ;) So, I decided to try to come up with a recipe that was low in carbs and still fit the bill for cheesiness.For the chicken seasoning, I used Weber's Grill Creations " Kick' N Chicken " seasoning. But you can use whatever chicken seasoning you have on hand.And as always with my recipes, you can adjust the amount of seasoning as you like. Submitted to " ZAAR " on May 21st, 2009.
I LOVE noodle pudding, not being Jewish I had no good family recipes for it but being from NY I DID have some great delis, and ate more than my share of it. Which is why I now need to make a low carb version :) This uses spaghetti squash instad of noodles. I took a recipe I had and tweaked it. Let me know how you like it. Its not the real deal but its close. Enjoy
A slight variation of the recipes found here. I use whole wheat flour and oats to help up the fibre content and reduce the carb impact. Using Splenda also helps for those watching their carbs or are diabetic.
I have low sugar and dairy tolerance, but have been craving a shake ever since watching my fiance and his cousin devour shakes during a long (and, for me, shakeless)car trip. So, I came home and made up this quick shake I can eat without fear of feeling sick. I was nice, though, and shared with my fiance. :) He didn't even know it was low-sugar or low-carb - I consider that a good sign!
