I'm always looking for ways to "healthify" recipes. I try to decrease the amount of fat and sugar and increase the amount of fiber. Sometimes it changes the texture or flavor so much my husband won't eat it, but when I can modify the recipe and my husband doesn't even notice then I know the recipe is a keeper! This is a quick easy side dish with amazing flavor. Using fresh thick cuts of zucchini, a nutty crust and creamy feta cheese sauce. This goes great with grilled steak, chicken or a grilled halibut or white fish. Good flavor with just a little work, makes this a very unique side dish.
Chocolate Peanut Butter Ice cream is my absolute favorite. I have not made this yet, but I created the recipe using several different recipes, and making it low-carb. I plan to try this soon. Let me know if you like it if you get to it before I do! Cooking time is freezing time =)
I made this with regular cream cheese and a sharp cheddar, but I'll post it with the reduced-fat ingredients. My personal preference is to add a little more cayenne pepper for heat, but this is also a great mild dip. I developed this recipe several years ago, as I had an abundance of my own home grown asparagus and just had to find new ways of using the asparagus. I submitted this recipe to TASTE OF HOME to see if it would rate. Well, I was awarded a runner-up prize which made me feel real good. It can be found in the April/May, 2004 Taste of Home edition on Page 27, ASPARAGUS PASTA PRIMAVERA. There's plenty of fresh herb flavor in this delicious pasta meal that blends asparagus, ham, mushrooms and plum tomatoes. Sometimes I like to use spinach linguine or fettuccine.
I've gone to Carrabas many times just for this soup. A lady from my supper club happened to bring this in for our soup theme and it tasted exactly like Carrabas! I've substituted Italian turkey many times and you would never notice the difference. You might also want to sprinkle some fresh basil and Parmesan cheese on top. Its good with a crusty piece of bread!
I came up with this variation on the Angel food cake in a quest to make the original even more bathing suit-season friendly. It has very little flour, which is usually the culprit of the high carb, and calories that are found in cakes and breads. I hope you like it...
