    This is an awesome low-carb version of loaded baked potatoes, and tastes far better than any version of mock potatoes that I have tried. In fact, this dish is soooo good, you will not believe it! I do not remember where I got this recipe, but it is a fabulous side to any low-carb meal. You will be pleased, I promise! Yum! Yum!

    Great for anyone going low carb OR who has so many zucchini, they don't know what to do!! :) We found the sauce to be very mild. I think it would be better with twice as much garlic. I boiled my zucchini slices for about 3 minutes so they were partially cooked. I wanted to make sure they were soft in the finished dish or I knew the kids wouldn't eat them. ;) The cottage cheese provides a slightly tangy note. I think we would have preferred ricotta, but that is personal taste. I use my 11x7 baking dish and got 6 pieces the size of what you see in my photos. Both of the guys ate two so it fed 4 of us, and I double the meat. Adjust the recipe accordingly for your family.

    If you're on a low-carb diet but crave the taste of spaghetti try this one. It goes well on the spaghetti too if you've got family members who don't low-carb. Or serve it to everyone on spaghetti squash. You can use fresh vegetables instead of the frozen and canned ones but pre-steam the broccoli so that the squash won't overcook waiting for the broccoli to finish. Try additional vegetables such as snap peas, green peppers, mushrooms, asparagus, etc. as available or substitute ground turkey or bulk Italian sausage as desired.

    Too easy! One ingredient! This was inspired by the crispy cheese hanging off the renowned cheeseburgers at Shady Glen, the burger/dairy restaurant in Manchester, CT. In fact, I understand they used to sell just a basket of crispy cheese. I like to snack on it, but it would also make a terrific garnish for fancier soups, salads, etc. I have done this with Cheddar (my favorite), Jack, Parmesan and American, all with good results. On the one hand, it seems to be one of those “guilty pleasures.” On the other hand – read the last cooking note at the bottom... Added Note: Although I was inspired by Shady Glen, I just found out the Italians have been doing this for years, and it is called "Frico". Some versions are baked, and it can be molded while warm, say to make a dish to hold olives, or to eat like a taco or tortilla, or it can be used to garnish fancy salads and more.

    These are supposed to be diabetic but I'm not comfy saying that they are a good choice for diabetics because of the high fat content. I'm posting them and everyone may decide of them selves. It's not like you'll be eating a dozen a day...right?

    These cheese crisps are very versatile....sprinkle them into a green salad, use with hors d'oeuvres, serve with cocktails, use as a garnish on macaroni and cheese, or just snack on them! Lots of different cheeses could be used, just make sure you use a hard cheese....if it's too soft it will just melt and spread to form a uniform sheet of cheese in your pan. Play around with the flavorings too...I've just added the red pepper but you can use sweet or hot chile powder or add some cumin, fennel or coriander seeds, lightly crushed. Herbs likie rosemary or thyme can be added as well.

    I found this recipe on the Low Carb Friends forum some time ago. I've baked this bread many times, and it's very good! The whole loaf only contains about 20 carbs, so when you slice it, divide the total carbs by the number of slices. (I usually get about 10 slices, which only amounts to 2 carbs per slice!) If the lid of your bread machine lifts slightly during the last 15 minutes of baking time, don't worry; when the bread is baked, the lid will lower. I prefer to eat this bread toasted slightly, and buttered.

UPDATE (10-27-06): I have always purchased Hormell pepperoni, but recently tried an off brand and found that they burned very quickly when I baked them. The length of time for baking will depend on your oven and the pepperoni. You will need to adjust to find the proper time for you...it could be up to 20 minutes.

    A low carber's dream come true! I saw this on the "Today" show and was intrigued. This came from the "Taste of Home" website. I haven't made this yet, but definitely plan too! I'm guessing this is more like a polenta than a bread. Note cook time and servings are for the smaller version, not the loaf.

    Tastes like a pizza, cuts like a pizza, yet there is no dough....though do have a fork and knife on hand for eating purposes because it can get a little messy if eaten with hands only. I am a South Beach dieter with a love for Italian foods and this is what curbs my craving for pizza. I love mine with the turkey pepperoni slices, onion, green peppers and mushroom. Serve with a tossed salad or marinated veggies.
