    This quick-bread is a great way to use up that lone avocado quickly passing it's prime! Not too sweet, pretty color, and no one in my household could guess that it was avocado. It's moist despite containing no oil. Avocados do differ in size, you want 1/2 cup mashed pulp. Walnuts can be substitued for pecans if desired. Number of servings is a broad estimate as it will depend on how thickly you slice it!

    I was going to make blueberry muffins when I realized that the kids had eaten all my blueberries, so I used mango pulp instead. This fork tender muffin will be very moist. It would be more appropriate at the breakfast table than trying to toss it into a lunch box.     I LOVE a good bakery bran muffin and have tried countless refrigerator bran muffin recipes, which always come up short. This recipe is from Cook's Illustrated and promises the best bran muffins. What is different about the ingred. is the ratio of white and wheat flours and wheat bran. The molasses, dark brown sugar help make up the great flavor and you will love the bakery crusty top. It is a little more work, but I would never bake any other recipe!

    You will not even notice that this is a low fat recipe, it is that good! One loaf yields 24 slices with 60 calories each and 1 gram of fat for every slice. Add in chopped nuts if desired but that will increase the the calories. Make a fat-free glaze using 1/2 cup powdered sugar mixed with 2-4 teaspoons fat-free milk then drizzle over warm bread. The batter can also be baked in four 4 x 2-inch mini loaf pans, for 30-35 minutes, these freeze very well! 2 eggs can be replaced with the egg substitute.

    I have no idea why this is called California Breakfast Bread or where it comes from. I found this recipe typed, by a real typewriter, on a sheet of note paper. Goes to show that it has been around for awhile. It is scrumptious.

    This recipe comes from my college roommate, Becky, who belongs to a very Irish family! Her family prefers this recipe because it's much sweeter than most soda breads. I like it because it's quick and easy!
