Garlic lovers and health nuts only! This single serving recipe is an extremely simple, yet flavorful variation on scrambled eggs. The cottage cheese adds a moist texture and the garlic gives it great flavor. Both spinach and garlic have wonderful health benefits (antioxidants, disease prevention, high vitamin content) and egg whites are a wonderful source of protein so it's a great way to start out your day! (Try adding cooked diced potatoes once and awhile - it's fantastic!)

Posting this here for Annie. (It's a long story.) If you don't use homemade stock use low-sodium beef broth so you can control the salt. You'll need to check your seasonings (salt and pepper) after making the gravy. This makes a little extra gravy for mashed potatoes or noodles or what-have-you. Prep and cooking times are approximate. You can do this! ETA: Thank you, Lainey, for the wonderful review. I was unclear in the instructions about the size of the patties if you had to cook them longer and I apologize. Change has been made specifying that. I'm glad you enjoyed them.

Whenever there is a shower, birthday, christening, etc., someone is asking for 150 to 200 of her famous meatballs. :) Of course, she always says yes! She is not one for "exact" measurements (a little of this, a dash of that), so I tried the best I could to adapt her recipe. Of course, these are best served with My Mama Iuliucci's "Don't Skip a Step" Spaghetti Sauce recipe #26947, but I have used jazzed-up jarred sauce and they are still great. However, meat-a-balls like these deserve a homemade sauce, in my humble opinion!
