(From Everyday Food) Scampi minus the butter and wine. Keep a bag of frozen (raw) shrimp in the freezer and you can have a quick and easy weekday meal on hand. (It just takes a few minutes to quick thaw the shrimp, follow the directions on the bag.) I always have a jar of minced garlic in the fridge and I often sub bottled lemon juice for fresh. I serve with steamed broccoli and a salad. You could also serve with a side of pasta, rice, or garlic bread.

I came up with this when I was among the many doing the Atkin's Low Carb dieting... This was something tasty without all the carbs. You may have to play with the measurements a bit as I never measured it, I just dumped it in a bowl all together and mixed it adding as I saw fit.

    2 lean protein, 1/2 grain/starch

This is a wonderful dish even for people who don't like spinach or broccoli. It's quick and easy and makes great left-overs. I got it from Taste of Home's Quick Cooking...published by Vicki Schrupp.

This is lovely but some may find that it needs a bit more coffee flavor. I use a rounded tbsp of the coffee when I make it. I'm partial to hazelnut flavor coffee and I like to add a pinch of cinnamon as well. This amount will make 2 smaller drinks or one tall glass serving.

From the South Beach Diet book. You can use this as a dip or salad dressing. It's great on lettuce wraps, and as a condiment for chicken or fish. Very good with salmon. It's also very fast and easy to prepare. NOTE to you South Beach Dieters - this is right out of the book. You can use reduced fat, but not fat-free mayo. Fat-free has too much sugar.

Back when I was "Beachin'" this was probably one of my favorite recipes. Very easy to make and such a nice change from a piece of meat and veggies. This is Phase 1 appropriate, and tastes very good topped with shredded 2% cheddar, a dollop of plain yogurt, and avocado slices. Even non-dieters will enjoy this thick and hearty soup. NOTE: To stay true to South Beach be sure and buy canned kidney beans with no added sugar and taco seasoning that is South Beach approved. I used Old El Paso.

I tasted a version of this salad while eating lunch at a restuarant in Fishkill, NY. I asked the waitress for the recipe, and she vaguely described how they prepared the chicken. Last night, I attempted to recreate the entire dish, and was very pleased with the results. Here is what I came up with. Please note that all of the dressing ingredients will be to taste and also the chicken cook time will be slightly different depending upon how much your pieces weigh, as well as how thinly you pound them. Herbes de Provence is a French dried herb blend containing lavendar. If you can't find it, use another herb blend you prefer. To get the amount of ground pistachios you will need to purchase a little over half a pound of them in the shell, then grind the nutmeats in a food processor until they resemble bread crumbs - and then measure them after grinding.

A sweet and filling breakfast for the low carb dieter. For those following the South Beach Diet, this is Phase I friendly. This recipe is adapted from an online SBD forum.

    Recipe #111066

I invented this in my kitchen at the end of the first week of Phase 1 out of desperation for a sweet instead of savory breakfast. Enjoy plain, or with sugar free syrup, or jam. For Phase 2 I would recommend fresh fruit (like berries), and fat-free no sugar added whipped cream; or you could core and slice some apples and saute in margarine before adding the egg mixture. This is also good with some yogurt on the side - try plain with fruit infused stevia (apricot is excellent!) This saved me from falling off the wagon and I hope it works for you too.

This recipe comes from krafthealthyliving.com. I haven't tried it yet, but it looks wonderful! As soon as I get a chance to make this dish, I'll let you all know how it is.

    Recipe #120351

Great P1 snack, breakfast, or dessert...

    Recipe #293500

This is from the South Beach Diet Cookbook. Nutritional data from the cookbook claims 204 cal, 7 g fat, 8 g carb, 1 g fiber per serving. Pay attention to the caloric and fat content of the steak you buy to meet your nutritional needs. This recipe would also be good with pork, chicken, or lamb.

    Recipe #393001

Phase 1 recipe from the South Beach Diet Cookbook

    Recipe #109594

I have not tried this recipe. I got it from South Beach. Try adding other extracts, such as peppermint, cherry, almond, coconut, raspberry, or banana.

Sugar-Free Alternative to Italian Cocoa Almond Pudding...south beach diet friendly.

This is being posted per a request. Recipe is printed in the SBD book page 182. Also listed is a Lime Zest version, an Almond and a Vanilla version. We have only tried the Mocha as this is our first week on SBD. Hope you enjoy and it satisfies your choco craving.

    Recipe #110938

I saw this on the Today Show this morning and decided that with a little adjustment, it could be a great South Beach-friendly recipe. Haven't tried it yet, but I plan to! Update: I tried it and it kinda sucks. I'd go try a different recipe.

    Recipe #203452

Having just started the South Beach diet, I am struggling to find tasty but easy and satisfying lunches. Today I wanted to try the cottage cheese/cinnamon/pecan creation, but had no artificial sweetener. Then remembered I had some instant, fat free sugar free vanilla pudding mix, and Voila--- a tasty alternative!
