    Recipe #192432

Winter squash and tomatoes are a winning combination. I've combined this with white navy beans and mozzarella cheese to make a complete and inexpensive meal to make ahead in a 2 quart crockpot. Turn on in the morning and by the time you're back from work, voila! There's dinner. This can be assembled the day before and stored in the refrigerator overnight. Please note tip for preparing squash.

    Recipe #316977

This gluten recipe is very versatile, so you can swap different oils and different herbs, such as oregano or basil. For thicker gluten, try adding a teaspoon of tahini. You can also use different chili pastes for the barbecue sauce or simply leave out the chili paste entirely. Adapted from Jason Wyrick, courtesy of GoVeg!

    Recipe #206771

Vegetarian version of the Spanish classic, but made with chickpeas instead of chicken.

    Recipe #156650

The roasted peppers sets this chili apart. Mildly spicy, but with a full flavor - you won't miss the meat! Great for vegetarians, or during Lent. This recipe is made for a slow-cooker, as it allows the full flavor to develop.

I really enjoy a good eggplant parmigiana. This one is good and relatively easy since it is finished in the crockpot.

A nicely spiced vegetable soup that is hearty enough to be a meal. It has an island flavor from the coconut that is slightly sweet with just a touch of herbs.

    Recipe #83279

Cooked Rice is used instead of meat to make this a complete meal. This recipe uses the spicy flavor of green chili pepper, without the sharp heat of chili powder. The cooking and prep time does Not include making the rice. If you want a little sweeter taste, use canned Stewed Tomatoes. There is nothing quite like chili to prove that Cooking is a Creative Sport.

This spicy southwestern soup has a touch of roasted red peppers in it. If you don't want to make your own, you can save time and use ready-prepared. Very warming on a cold day and makes the house smell great!

We really enjoyed this simple soup. Recipe source: Fresh from the Vegetarian Slow Cooker.

Meatless but very flavorful. This is hard-core comfort food! Also very easy to make. Adapted from "Fresh from the Vegetarian Slow Cooker" by Robin Robinson. Serve with your favorite salsa, and a dab of sour cream, if you like. Like many reviewers, I don't particularly like the topping, so I substitute another cornbread made from another recipe, or from 1 box of Jiffy cornbread mix.

A vegetarian version of sloppy joes

    Recipe #210254

Adjust the cayenne to control how hot you want this. You may also add in chopped fresh jalapeno. I usually serve over rice or polenta.

I have tweaked this cooking light inspired vegetarian dish, just a little to boost flavor, added a few calories, but boy it really is worth it. I have adapted this recipe for the crockpot, but all you really need to do for stove top is cook the chickpeas completely before starting and simmer the soup for 30 minutes.

    Recipe #103770

In this recipe from her cookbook "Fresh From the Vegetarian Slow Cooker," Robin Robertson replaces the meat in traditional Hungarian Goulash with tempeh. Robertson suggests serving this dish with wide noodles.

Chunks of eggplant cook in a slow cooked spaghetti sauce offering a low calorie alternative to ground beef or sausage. From Better Homes and Gardens. French and Italian!
