The Kartoshnik looks like a cake but is eaten like a potato. Serve with your main meal. This recipe was given to me by my grandmother over 50 years ago. Since then, I have modified the recipe and it is even better than the original.

My Polish grandmother could work magic with a few simple ingredients. A refreshing change from the the complex and highly seasoned foods of modern cuisine.

Very easy (only three ingredients!). Ingredient amounts are approximately -- it doesn't really matter how much you use, it will still turn out fine.

This is a tasty way to fix leftover mashed potatoes so they don't feel like leftovers. Sometimes I make too many potatoes on purpose, so I can make this up and refrigerate it for later in the week.

Quick easy recipe to make after a hard day's work. For the mashed potatoes use plain cooked potatoes mashed with no added ingredients. Just cook extra potatoes the night before and take out what you will need for this recipe. If you want a little spice add 1/2 tsp hot pepper flakes I like a bit of Tartar sauce and a green salad along side or a couple of steamed vegetables. Great summer dish. This recipe goes a long way from one small can of salmon. I would like to stress use leftover cooked potatoes not left over mashed potatoes that already have got a lot of extra ingredients in them!

Recipe #31710

Another of my favorite recipes from the Sunset International Cookbook. The original recipe called for peeled and chopped raw potatoes but I've never had good luck using raw potatoes for this recipe. Therefore my adaptation is to use leftover cooked (mashed) potatoes. Can be served as a main meal sidedish or for breakfast.

A great way to use left over potatoes. Every Christmas Eve we had perogies. They do go fast so we'd fight over them. The fillings are unlimited. Cabbage, Cheese, Fruit, mushrooms, sauerkraut or check out my Recipe #146547 FYI: add a touch of herbs to one dough and paprika, curry, cinnamon to another when making a couple different fillings so you can tell which is which. Just do complement the fillings!

This is a tasty, quick, and easy dish to prepare when you have no time to plan for supper. This is so easy to prepare and will please a hungry group of children on a chilly day. You may substitute peas & carrots for the green beans if you prefer. You may also substitute ground lamb for the ground beef, or even leftover minced roasted beef/lamb (in which case just saute the onions alone and mix with the cooked meat). I usually use homemade leftover garlic mashed potatoes in this, but if all you have is instant, well - this is supposed to be a Lazy Mom's dish, so go ahead. I garnish this with a sprinkle of paprika if I am leaving out the cheese. Don't worry about the lack of salt & pepper in the meat - the soup provides all the seasonings and is the "secret" ingredient. Doubles well, and also can be made the day before, chilled and baked the next day for a hot lunch.

My mother used to used left over mashed potatoes to make these potato pancakes the next night for supper. She fried hers and they were quite delicious. However, baking is less messy.

The mashed potatoes make these rolls light as a feather. They are easy because you don't have to knead them and you can make them up to a day before you need them--baking them right before you want to serve them. Perfect for your big holiday dinners.

This is an old Eastern European fake out. If you have left over mashed potatoes and don't want to throw them out try this. It's great as a side and I've give a dessert variation.

Don't know what to do with all those leftover mash potatoes? Is time short and you need something fast to feed your hungry family? You'll love this so much you'll want to make extra mashed potatoes just so you can make them. The recipe comes from Chatelaine Food Express Quickies 2.

True comfort food at it's finest, and one of our all-time favorites! Perfect for a chilly autumn or winter's day, and goes great with a glass of cider or Guinness. Recipe is from my sis-in-law Ellen, who happens to be married to an Englishman. I hope you enjoy as much as we do!

I haven't tried this one yet, but it's a local favorite that was published in our town newspaper. Sounds wonderful!

Easy to make and freezes great! I would recommend baking it before freezing to blend flavours.**edited on October 24 to add instructions for Once a Month Cooking (see step 11). These is great to make during a cooking blitz especially when you are already making a traditional lasagne. It is easy to cook up some additional noodles and make this at the same time.**
