    I love these. You can make them fancy for your next dinner party or simple for the kids. They are so fun to do and great to make a day or so ahead. You can use any fillings you like. I prefer hamburger meat but you could use anything from spinach to sausage. I haven't had luck in finding round wonton wrappers to I cut the square ones and then line my cupcake pan. When you are done layering you can pipe ricotta on top to make it look like a real cupcake....I don't do that and found it is just as good.

    This recipe is from the Ball Complete Book of Home Preserving. You can fiddle with the amount of spices, and even add others if you wish, but do not alter the proportion of tomato purée to lemon juice, as this could make it unsafe to water bath can. The recipe calls for plum tomatoes, but I think you could use others if you like. The length of the "Preparation Time" depends on whether or not you have a food mill or Victorio strainer. If you do have one of these the prep will probably only be about 20 to 30 minutes. If you don't the prep will probably take about an hour. "Cooking Time" includes processing time.

    This is a variation on my favorite Pizza Dough recipe from an old Doubleday Cookbook. You'll find the dough more elastic and the crust more chewy than regular pizza. The key ingredient is Vital Wheat Gluten that shows up in many low carb foods. Be sure "Vital" is on the label since it has more protein and fewer carbs than other types of gluten. This recipe is more suitable for people on Weight Watchers or the Zone Diet than on Atkins. The 50/50 mixture of bread flour and gluten provides roughly half its calories from protein while the other half are from carbs. Vital Wheat Gluten is often available as a bulk item in health food stores.     A fabulous white pizza... again, four cheeses are used (grated parmesan, provolone, ricotta, & mozzarella) as well as fresh broccoli florets. You could substitute with spinach if you like, but we LOVE this recipe as is... I buy the pre-made pizza dough from my grocery store to save time, but you could always make your own of course. Also, I use MILD provolone - it's pre-packaged & pre-sliced think it is Belgioioso brand. Note: I use the 12 oz. bag of "Broccoli Wokly" which is already cut into florets - I steam it according to the package directions first in the bag & use the full bag on the pizza.

    *NOTE:Recipe has been updated and fixed since the first review.** Like lots of people I had been seeing the commercial for Olive Garden's new dish, the Lasagna Rollatini with Fontina cheese sauce and wanted to try it soo bad. For those that haven't, a rolled up lasagna noodle stuffed with four cheeses and spinach, oven backed with a white cheese sauce with tomatoes and spinach. But like most times, i just haven't had time to go and try it. So after doing a lot of searching through ideas, I came up with my own Copycat version. My husband doesn't even want to try it now, saying it wouldn't have anything on this recipe! But he can be a little biases. :-) Let me know. Also, this makes a lot so can easily be halved, especially if you want to have some breaded chicken with it. This makes A LOT!

    I created this pie in my Advanced Food Class in college...It is light,delicious, and very simple to make! You can use whatever sliced fruit you like as a topping. During the holidays I use kiwi and strawberry (red and green!) and shape the kiwi into a christmas tree in the middle and surround the rest of the pie with sliced strawberries! :) Enjoy!
